Abstract

本发明公开了一种组分为RA和STV的甜菊糖,其各组分及重量比为:RA∶STV=(1.00-99.00)∶(99.00-1.00),所述RA和STV的质量百分含量为60-99%。本发明是把甜菊糖的两种组成成分RA和STV进行混合,使其口感更好,可以广泛适用于饮料类、烘烤类、腌制类、甜味类等各种食品。本发明一种组分为RA和STV的甜菊糖纯天然、零热量,既弥补了蔗糖高热量、过量摄入损害健康、引发慢性疾病的缺憾,也满足了人类对健康的渴求,博得了广大消费者的喜爱。

技术领域
本发明涉及甜菊糖的深加工,具体是一种甜菊糖。 
背景技术
当今人类存在对甜味食品的普遍偏好,吃糖类食品成为人们摄入能量的主要方式,但近年来由于糖类物质的过量摄入引发的诸如肥胖、糖尿病、高血脂症、小儿龋齿等现象,在世界各地普遍存在。世界卫生组织(WHO)曾调查了23个国家人口的死亡原因,得出结论:嗜糖之害,甚于吸烟,长期过量食用高糖、高热量的食物会使人的寿命明显缩短,并提出了“戒糖”的口号。但完全拒绝吃糖是一件困难的事,几乎所有甜味食品中,都大量用白糖来增甜。但吃白糖多了,影响对其他富含蛋白质、维生素、矿物质和膳食纤维食品的摄入。长此以往,会导致营养缺乏、发育障碍、肥胖、心脑血管疾病、糖尿病、肥胖症、老年性白内障、龋齿、近视、佝偻病等疾病的发生。因此随着人们健康理念的不断提升,低热量、纯天然的健康糖将倍受人类的喜爱。 
甜叶菊的发掘和利用给人类带来了福音。甜菊糖就是从菊科植物甜叶菊的叶片中提取的纯天然甜味剂,其高甜度、低热值、低脂肪、味质好、安全无毒,甜度是蔗糖的300倍,热量却是蔗糖的1/300,被称为“人类健康的保护神”。从甜菊糖试的组分构成可以看出,我们习惯所说的甜菊糖实际是指甜菊糖总甙或者是甜菊糖甙,甜度一般为蔗糖的150-250倍。STV(莱鲍迪甙A)、RA(甜菊甙)和瑞鲍迪甙C为甜菊糖甙的三大组分,STV的甜度一般为蔗糖的300倍,RA的甜度一般为蔗糖的300-400倍。但瑞鲍迪甙C有苦涩味,当产品中瑞鲍迪甙C的含量在0.5%-3%时即可影响甜菊糖甙的口感和产品质量。因此,开发不含瑞鲍迪甙C的高纯度的STV、RA产品是发展的方向。 
发明内容
本发明的目的是提供一种甜菊糖。它既弥补了白糖的高热量、摄入过量影响健康的缺陷,又充分利用了甜菊糖纯天然、高甜度、安全稳定的优点。本发明利用甜菊糖RA和STV进行混合,构成一种组分为RA和STV的甜菊糖,使其口感更好、味质更鲜、安全性更强、使用更方便,满足了人们降低饮食热量的要求。 
本发明技术方案是:一种甜菊糖,它是将甜菊糖RA和STV进行混合而成。所述RA与STV之间的重量比例范围为:RA.STV=(1.00-99.00)∶(99.00-1.00)。所述RA和STV的质量百分含量为60%-99%,优选质量百分含量为70-90%的RA和STV。 
本发明进一步的技术方案是在综合分析口感、安全性、生产成本、方便使用等因素的基础上,对所述RA与STV之间确定了一下最优比例范围为RA∶STV=(5.00-95.00)∶(95.00-5.00)。 
从甜叶菊中提取高端甜味剂甜菊糖,热量低、纯天然、安全性高、加工时热稳定性好。甜菊糖甙作为一种新型天然甜味剂可广泛应用于各类食品、饮料、医药、日化工业品中。广义上讲,凡是用糖产品几乎都可以用甜菊糖替代部分蔗糖或替代全部糖精。目前,甜菊糖甙主要应用于饮料、药品中,尤其饮料居多, 另外在冷食、罐头、蜜饯、调味品、酒类、口香糖、牙膏中均有一定程度的应用。不同种类的产品,甜菊糖甙的添加量有所不同,需要经过反复研究试验,选取最佳配比,以保证产品的品质、口感、风味。作为无热量食品的甜味剂,兼有降低血压、促进代谢、治疗胃酸过多等作用;常作为甘草或蔗糖的增甜剂,并往往与柠檬酸钠并用,以改进甜味,主要用于苦味饮料、碳酸饮料、腌渍制品等方面。 
本发明一种组分为RA和STV的甜菊糖组合物可以用常规食品加工方法进行加工。在通常的食品饮料加工条件下,甜菊糖甙的性质是相当稳定的(具有对酸、碱、热、光的稳定性和非发酵性),有利于降低粘稠度,抑制细菌生长,延长产品保质期。 
甜菊糖甙在体内不参加代谢,不蓄积,无毒性作用,2008年12月获得了美国FDA和法国批准。甜菊糖纯天然、高甜度、安全稳定的优点,满足了广大消费者对甜食的需求和对健康的渴望。
