Claims (3)
- Appareil de cuisson industriel (1)- comprenant un boitier (2)• dans lequel une enceinte de cuisson (3) est disposée, et• qui présente une paroi arrière d'enceinte de cuisson (4),- comprenant un ventilateur (5)• qui est agencé dans une zone (6) proche de la paroi arrière d'enceinte de cuisson (4) du boitier (2), et• qui présente des pales principales (7) orientées vers l'enceinte de cuisson (3) pour produire un courant d'enceinte de cuisson (GRS),- avec une ouverture d'accès d'air frais (9), qui est agencée dans la paroi arrière d'enceinte de cuisson (4),- une conduite d'amenée d'air frais (14), pour amener l'air frais (FL) à l'ouverture d'accès d'air frais (9),- avec un dispositif d'accélération (11) pour le courant d'enceinte de cuisson (GRS), le dispositif d'accélération (11) étant fixé dans l'enceinte de cuisson (3),caractérisé en ce que :le dispositif d'accélération (11) présente deux déflecteurs (11A, 11B), qui sont disposés avec un angle (α) par rapport à la paroi arrière d'enceinte de cuisson (4) et délimitent l'ouverture d'accès d'air frais (9),un premier déflecteur (11A) est disposé dans une première zone de paroi (10') de la paroi arrière d'enceinte de cuisson (4), qui est décalée par rapport à l'enceinte de cuisson (3) en direction de la conduite d'amenée d'air frais (14),un deuxième déflecteur (11B) est disposé dans une deuxième zone de paroi (10) de la paroi arrière d'enceinte de cuisson (4),les deux déflecteurs (11A, 11B) ont chacun l'angle (α) par rapport à leur zone de paroi (10', 10) respective,de sorte que le courant d'enceinte de cuisson (GRS) puisse être envoyé directement sur l'ouverture d'accès d'air frais (9).
- Appareil selon la revendication 1, caractérisé en ce que le dispositif d'accélération (11) est disposé à proximité de l'ouverture d'accès d'air frais (9).
- Appareil de cuisson industriel selon la revendication 1 ou 2, caractérisé en ce que l'ouverture d'accès d'air frais (9) est disposée au-dessus du bord supérieur du ventilateur (5) dans une zone de paroi (10) de la paroi arrière d'enceinte de cuisson (4).
