Abstract

Procedimiento para la fabricación de una cubierta comestible sobre huevas de pescado frescas, refrigeradas o descongeladas. Procedimiento para la fabricación de una cubierta comestible sobre huevas de pescado frescas, refrigeradas o descongeladas, que consiste en recubrir las huevas frescas, congeladas o descongeladas por inmersión, aspersión u otro procedimiento, en una solución o dispersión de alginato sódico, a una concentración que oscila entre 0,2% y 2,5% (p/v), eliminándose el producto sobrante para obtener una película uniforme sobre la hueva, y posteriormente tratar las huevas pretratadas por inmersión o aspersión en una solución de cloruro cálcico a alta concentración, pudiendo adicionarse polisacáridos y proteínas en el alginato sódico y potenciadores de sabor y antioxidantes.
