Abstract
Procedimiento para la obtención de masa de almendra exenta de grasas. Se aplica sobre la masa de almendra elevada presión, del orden de las cinco toneladas en frío, o a la temperatura ambiente, provocándose la extracción de la totalidad o parte del contenido graso o aceite, quedando entonces una masa de almendra que no se enranciará y será apta para aplicaciones alimenticias, cosméticas y farmacéuticas. El aceite así extraído es de aplicación inmediata, mientras que la masa de almendra tratada bajo prensa hidráulica, queda lista para su uso, tal cual, amasándola como componente de alimentos tales como turrones o análogos. La masa de almendra amasada puede también tratarse, añadiéndole sustancias acalóricas inodoras e insípidas, tales como celulosa microcristalina y Aerosil-20 (gel de sílice), que se mezclan con agua obteniéndose un granulado y a continuación se realiza su secado, pudiéndose entonces ser comprimida y utilizada de este modo. A la masa de almendra tanto amasada como comprimidapuede añadírsela potenciadores de sabor para obtenerlo según se desee.
