Abstract

Levadura Torulaspora y su uso para la elaboración de productos fermentados.#La presente invención pertenece al campo técnico de las fermentaciones industriales, más concretamente, la presente invención se refiere a una levadura del género Toluraspora que pertenece a la especie T. delbrueckii o T. pretoriensis, con capacidad para degradar ácido L-málico y producir ácido L-láctico, caracterizada por los números de depósito CECT13083 y CECT13082, y a su uso para elaborar productos fermentados. Asimismo, se refiere a un procedimiento para elaborar productos fermentados que comprende la fermentación de una materia prima de partida con dicha levadura Toluraspora.
