Abstract

L'invention concerne une biogomme. On obtient une biogomme ayant une dispersabilité améliorée en chauffant la bière de fermentation dans laquelle la gomme est produite en présence d'environ 0,5% à environ 5% d'un dialhéhyde par rapport au poids de biogomme sèche dans la bière. Cette biogomme peut être utilisé comme épaississant des systèmes aqueux.
