Abstract
PURPOSE: To prepare 3-0-α-D-gluco-pyranosyl maltose, easily, in high yield, by treating a novel α-glucan having specific recurring units with α-amylase.
CONSTITUTION: A novel α-glucan of formula having main recurring unit of [3)- Glc-(1→4)-Glc-(1→4)-Glc-(1→] is separated from a highly viscous culturing medium obtained by culturing microorganisms belonging to Elsinoe genus in a nutrient medium containing sugar, etc. An aqueous solution containing e.g. 0.1W 5% of the α-glucan is made to react with about 10W100 unit of α-amylase (based on 1 g of the α-glucan) at pH5W10 and 20W70°C to afford the objective 3-0-α-D- glucopyranosyl maltose. The α-amylase is those progomated from animal such as human saliva, or from vegetable such as malt.
