Abstract

PURPOSE: To prepare a gel composition capable of forming gel easily with water at room temperature without heating and dissolving, by compounding the extract of red algae with a sodium salt, a potassium salt and starch.
CONSTITUTION: The objective composition is composed of (A) 0.05W2% (as the concentration when taken as food or drink; hereafter referred to as %) of the extract of red algae, e.g. carrageenan, agar, furcellaran, etc., (B) 0.01W1% of an organic or inorganic acid sodium salt, e.g. sodium citrate, sodium orthophosphate, sodium L-ascorbate, etc., and (C) 0.01W1% of an organic or inorganic acid potassium salt, e.g. potassium acetate, potassium carbonate, potassium chloride, etc. Gel is obtained by mixing the composition with water and if necessary starch, and shaking and stirring the mixture.
