Abstract
PURPOSE: To prepare a refined "sake" suitable for drinking without heating "sake", having a refreshing feeling like wine, and not producing the smell of aged Japanese persimmon even by too much drinking, by using both white koji and wine yeast.
CONSTITUTION: In preparing a refined "sake" conventionally, an unrefined "sake" is prepared by using both white koji obtaned by propagating "Asperugillus Kawaochii" in steamed rice and wine yeast, and by adding a saccharification solution to the unrefined "sake" during its saccharification and fermentation.
