Yer degistiren polifenoller tipik olarak yag içinde eriyebilen polifenollerdir. Muamele edilen sivi yaglar oksidasyona karsi bir artmis kararlilik gösterirler. Tadlari artmistir ve baslangiçtaki sivi yagdan daha yüksek bir tad degeri almaktadirlar.
