Abstract
The invention relates to the food industry particularly the alcoholic beverage industry. It intends for production of liqueurs bitters. The liqueur bitters is produced by blending (per 1000 dal) 0,11–756,7 kg of 92 % sugar syrup (0,1–700 kg of sugar), alcoholized oak extract, in terms of the total extract content of 0,2 g/dm3, 0,1–50 kg, vanilla, brandy, and chocolate essences in the form of 10 % aqueous-alcoholic solutions by 0,01–1,5 kg each, 0,02–10 kg of citric acid in the form of 20 % water solution, aqueous-alcoholic liquid with a volume fraction of ethyl alcohol of 30-60 %. The rectified grape ethyl alcohol and/or rectified ethyl alcohol of the highest purification are used as ethyl alcohol. In addition the blend may contain 0,5–1500 kg of colour per 1000 dal. The liqueur bitters has the following organoleptic properties: a transparent liquid without a sediment and impurities, colour – amber, aroma – soft, harmonised, vanilla-chocolate with swift cognac aroma, taste – harmonious, balanced. 2 3 claims.
