Abstract

An extraction device (1) and a respective modular machine, for the extraction of olive oil from an olive paste by means of percolation, wherein, the improvement consists, in the first place, in the fact that the extraction device (1) has been equipped with an overturning/tilting and washing system for washing the same, to facilitate its maintenance and washing, and in that the machine is conceived in a way that its various components-modules may be arranged/distributed in the most convenient manner in one or more installation rooms by virtue of the modularity of this machine.
