Abstract

【課題】菌体リサイクルを行うアルコール連続生産において、リサイクル率と、希釈率の最適な範囲を特定して、高いエタノール生産性を有する、アルコール連続生産方法を提供すること。 【解決手段】発酵槽内に凝集沈殿性を有する酵母を存在させ、発酵槽にアルコール原料を供給してアルコール発酵を行い、得られたアルコール培養液を前記発酵槽から引き抜いて、かつ前記引き抜いた液中の酵母菌体は回収し前記発酵槽内に返送する菌体リサイクルをしながらアルコール発酵を行う際に、前記発酵槽下方に強制的な液流を発生させてアルコールを生産するアルコール連続生産方法であって、菌体のリサイクル比(r)を0<r<0.4とし、希釈率D(h-1)が0.2≦D≦0.3とする条件で行われているときに、アルコール生産性(g/L・h)が15g/Lh以上となることを特徴とする。
