Abstract

 原料の一部としてホップを用いることなく、香味等の特性に優れた発泡性アルコール飲料を製造する方法を提供する。  原料の一部として、ホップを使用することなく、発芽させたエンドウを使用して発酵前液を調製する発酵前工程(10)と、前記発酵前液に酵母を添加してアルコール発酵を行う発酵工程(11)と、を含む発泡性アルコール飲料の製造方法とする。
