Abstract

【課題】不定形な被加熱材を均一に加熱することができ、且つ加熱電極による被加熱材の加熱・保持搬送を安定して行うことができる加熱電極及びそれを用いた食材の加熱方法を提供する。 【解決手段】導電性ピンから成る複数のピン電極１０の集合体をピン支持台２０の貫通穴２１に摺動可能に配設し、ピン支持台２０に圧力が可変する圧力可変ガスチャンバ３０を結合し、上記ガスチャンバ３０を加圧または減圧することにより、ピン電極１０をピン支持台２０に対し相対変位させる。
