 野菜や茹で卵などの高水分食材を用いた料理に配合することにより、料理の製造後に長時間が経過した場合においても料理からの離水を抑制できる組成物を提供する。この組成物は、食用油脂、水分、タンパク質、還元澱粉糖化物及び多糖を含有してなり、食用油脂と非溶解状態の水溶性粉体成分とがそれぞれ分散し、全光線透過率(対照:清水、波長390nm、光路長5mm)が13~35%、水で3倍に希釈した場合の全光線透過率が0.1~12%の水溶性粉体成分分散組成物である。

Description

水溶性粉体成分分散組成物及びその製造方法、並びに水溶性粉体成分分散組成物を用いた食品
 本発明は、野菜や茹で卵などの高水分食材を用いた料理に使用する水溶性粉体成分分散組成物であって、高水分食材を用いた料理の製造後、長時間が経過した場合においても、料理から離水が生じ難く、しかも、料理の食味も損ない難い水溶性粉体成分分散組成物及びその製造方法、並びに水溶性粉体成分分散組成物を用いた食品に関する。
 野菜を炒めて調味した野菜炒めや茹で卵を調味料で和えた卵サラダなどの高水分食材を調味料と和えた料理は、作りたてを食するのが基本とされている。製造後時間が経過するとこれら野菜や茹で卵から水分が染み出し、料理全体に離水が生じ、野菜や茹で卵本来の食味が損なわれ、料理全体としての外観も悪くなる。特に、塩分濃度が高かったり、酸味が強い料理は、野菜や茹で卵から水分の染み出しが促進され、前記問題が生じやすい。
 このような問題を解決する方法としては、従来、保水性のある増粘剤を添加する方法が提案されている。例えば、特開平11-196764号公報(特許文献1)には、a)酢酸ナトリウム、b)グリシン、c)キサンタンガム、並びにd)グアーガム、ローカストビーンガム、タマリンドガム、トラガントガム、アラビアガム、及びカラギーナンからなる群より選ばれた一種以上の物質を含有することを特徴とする、茹で野菜からなる和え物用組成物が提案されている。また、特開2008-141972公報(特許文献2)には、低粘性ガラクトキシログルカンを含有することを特徴とする生野菜、惣菜又は具材のドリップ防止剤が提案されている。しかし、単に、増粘剤を添加する方法では、離水防止効果を得るために十分な量の増粘剤を添加すると、料理全体の食味が悪くなるという問題があった。このため、単に、増粘剤を添加するだけでは、食味を損なわずに料理の離水を防止することが困難であった。

 本発明の目的は、野菜や茹で卵などの高水分食材を用いた料理に配合される組成物であって、料理を製造後、長時間が経過した場合でも、料理の食味を損なうことなく料理からの離水を抑制する組成物を提供することを目的とし、また、そのような組成物の製造方法、並びにその組成物を用いた食品を提供することを目的とする。
 本発明者は、特定の成分を含有してなり、食用油脂と水溶性粉体成分が非溶解で分散している水溶性粉体成分分散組成物であって、加水により透明性が著しく低下する組成物を高水分食材に配合すると、高水分食材からの離水が防止され、食味が損なわれ難くなることを見出し、本発明を完成させた。
 即ち、本発明は、食用油脂、水分、タンパク質、還元澱粉糖化物及び多糖を含有してなり、食用油脂と非溶解状態の水溶性粉体成分とがそれぞれ分散し、全光線透過率(対照:清水、波長390nm、光路長5mm)が13~35%、水で3倍に希釈した場合の全光線透過率が0.1~12%であることを特徴とする水溶性粉体成分分散組成物を提供する。
 また、本発明は、野菜、加熱凝固卵加工品、及び豆腐の少なくとも一種を原料とする食品であって、上述の水溶性粉体成分分散組成物が配合されている食品を提供する。
 さらに、本発明は、上述の水溶性粉体成分分散組成物を製造するために、水分、タンパク質、還元澱粉糖化物及び多糖に対応する食品素材を使用する水溶性粉体成分分散組成物の製造方法であって、
前記食品素材の一部であって、水溶性粉体のものと食用油脂とを混合することにより水溶性粉体の油中分散物を調製する工程1、及び該油中分散物に、前記食品素材の残部を混合する工程2を有することを特徴とする水溶性粉体成分分散組成物の製造方法を提供する。
 本発明の水溶性粉体成分分散組成物を、野菜、卵などの高水分食材に配合して料理を作ると、本発明の組成物が高水分食材から染み出た水分を吸収してとろみのある水中油型乳化物になり、料理全体と一体化するので、料理からの離水が防止される。したがって、高水分食材を用いた料理を製造後、長時間が経過しても料理の食味が損なわれにくくなる。

 以下、本発明を詳細に説明する。なお、本発明において、特に断りのない限り、「%」は「質量%」を意味し、「部」は「質量部」を意味する。
1.水溶性粉体成分分散組成物
 本発明の水溶性粉体成分分散組成物は、食用油脂、水分、タンパク質、還元澱粉糖化及び多糖を含有する。この組成物は、高粘度のペースト状や低粘度の液状など種々の状態を取り得るが、いずれにおいても、食用油脂と非溶解状態の水溶性粉体成分とがそれぞれ組成物中で分散しているという特徴を有する。
 この水溶性粉体成分は、タンパク質、還元澱粉糖化物及び多糖の少なくとも一部から形成されていると考えられる。
 また、この水溶性粉体成分は吸水作用を発揮する。即ち、非溶解で分散状態である水溶性粉体成分は、調味液と接すると、浸透圧差により調味液から水分を吸収し、また野菜や卵などの高水分食材と接すると、それらから染み出した水分を吸収する。特に、加熱などにより高水分食材から染み出した水分は速やかに吸収される。
 一方、本発明の水溶性粉体成分分散組成物において分散状態にある食用油脂は、水が添加されると、後述するように微細化した油脂粒子となり、相転移が生じて乳化状態で安定に分散する。
 このため、本発明の水溶性粉体成分分散組成物を高水分食材に配合すると、油脂が微細粒子化する相転移と、水溶性粉体成分による吸水作用との相乗効果により、高水分食材から染み出た水は容易に安定した乳化状態を形成し、高水分食材を用いた料理全体と一体化する。その結果、料理からの離水が防止され、食味も損なわれ難くなる。
 本発明の水溶性粉体成分分散組成物において、水溶性粉体成分が非溶解で分散状態で存在することは、本発明の組成物を光学顕微鏡で観察(倍率:500倍)することにより確認することができる。また、観察により確認された粉体(粒状物)が水溶性であることは、本発明の組成物を水で希釈し、その希釈液を同様に光学顕微鏡で観察すると、その希釈液中に粉体(粒状物)が観察されないことにより確認できる。
 一方、本発明の水溶性粉体成分分散組成物は、全光線透過率(対照:清水、波長390nm、光路長5mm)が13~35%であり、水で希釈すると透明度が低下し、3倍に希釈した場合には、全光線透過率が0.1~12%、好ましくは1~10%になるという特徴を有する。このように水の添加で透明度が低下するのは、本発明の水溶性粉体成分分散組成物は、食用油脂が分散している食用油脂分散物であるが、水の添加により容易に相転移が起こり、油脂粒子が微細化した乳化状態になるためと考えられる。
 なお、この相転移は、微細な油滴の乳化物が得られるD(Detergent)相乳化法に類するものと考えられる。ただし、D相乳化が、乳化剤を多価アルコール又は多価アルコール水溶液に溶解し、これに油相を添加して乳化することによりO/D乳化組成物を製造し、次いで、このO/D乳化組成物を水性媒体で希釈することにより、微細な水中油型(O/W型)エマルジョンを得る方法であり、水性媒体で希釈する前のO/D乳化組成物が略透明であるのに対し、本発明の水溶性粉体成分分散組成物は、食用油脂、水分、タンパク質、還元澱粉糖化物及び多糖の混合物であり、非溶解状態の水溶性粉体成分が分散状態にあることにより、水で希釈する前において透明とはいえないことから、本発明の水溶性粉体成分分散組成物は、D相乳化物を作るO/D乳化組成物とは異なると考えられる。
 また、本発明において、全光線透過率は、清水の全光線透過率に対する値である。すなわち、全光線透過率は、サンプルへの平行入射光束に対する、拡散成分を含む透過光束の割合であり、本発明におけるサンプルの全光線透過率(%)は、対照である清水の透過率を100%とした場合のサンプルの透過率(%)を示す。より具体的には、全光線透過率は、積分球式電光度法を用いた濁度測定により、波長390nm、光路長5mmで得られる数値であり、濁度測定器(型名「WA 2000N」、日本電色工業(株))を用いて測定することができる。
 次に、本発明の水溶性粉体成分分散組成物を構成する各成分について説明する。
タンパク質
 タンパク質としては、具体的には、乳タンパク、卵タンパク、大豆タンパク等が挙げられる。
 乳タンパクを本発明の組成物に含有させるためには、本発明の組成物の製造時に、乳タンパクに対応する食品素材、より具体的には、乳タンパクを主成分として含有する乳又は乳製品を配合すればよい。乳又は乳製品としては、例えば、乳又は乳製品乳及び乳製品の成分規格等に関する省令(昭和26年12月27日厚生省令第52号)に規定されているものをあげることができ、例えば、牛乳、濃縮乳、全粉乳、脱脂粉乳、加糖粉乳、チーズ、ホエーパウダー、タンパク質濃縮ホエーパウダー、クリーム等がある。
 このような食品素材の配合時の形態としては水溶性粉体が好ましく、かかる水溶性粉体の好ましい例として、全粉乳、脱脂粉乳、加糖粉乳等の粉乳がある。
 卵タンパクを本発明の組成物に含有させるためには、卵タンパクに対応する食品素材、より具体的には卵タンパクを主成分として含有する卵黄、又は卵黄と卵白の混合物等を本発明の組成物の製造時に配合すればよい。このような食品素材を構成する卵としては、生の卵の他、当該生卵に殺菌処理、冷凍処理、スプレードライ又はフリーズドライ等の乾燥処理、ホスフォリパーゼA1、ホスフォリパーゼA2、ホスフォリパーゼC、ホスフォリパーゼD又はプロテアーゼ等による酵素処理、酵母又はグルコースオキシダーゼ等による脱糖処理、超臨界二酸化炭素処理等の脱コレステロール処理、食塩又は糖類等の混合処理等の1種又は2種以上の処理を施したもの等が挙げられる。
 卵タンパクを本発明の組成物に含有させるための食品素材の配合時の形態としては、液状でもよく、粉末状でもよい。
 大豆タンパクを本発明の組成物に含有させるためには、大豆タンパクに対応する食品素材、より具体的には大豆タンパクを主成分として含有する分離大豆タンパク(脱脂大豆から抽出したタンパク質を酸処理の後中和して噴霧乾燥したタンパク質含有量が90%以上のもの)、濃縮大豆タンパク(脱脂大豆から水溶性の糖や灰分等を除き、タンパク質含有量を70%以上に高めたもの)などを配合することができる。
 また、大豆タンパクには、大豆タンパクの部分分解物が含まれるものとする。このような部分分解物としては、具体的には、タンパク質原料を酵素あるいは酸等を用いて部分的に分解することにより得られるオリゴペプチド等が挙げられる。
 本発明の水溶性粉体成分分散組成物においては、上述のタンパク質の中でも、より離水防止効果が得られ易いことから、乳タンパクを含むことが好ましく、卵タンパクを更に含むことがより好ましい。
 本発明の水溶性粉体成分分散組成物におけるタンパク質の含有量は、2~10%とすることが好ましく、3~8%がより好ましい。
 また、本発明の水溶性粉体成分分散組成物においてタンパク質を含有せるために配合する食品素材中の固形分の合計量は、離水防止効果の点から0.1~30%とすることが好ましく、1~25%がより好ましい。これに対し、タンパク質を含有する食品素材の固形分量が少なすぎると、食用油脂を分散させておくことができず、層分離が生じやすい。反対に多すぎると、上述の相転移を生じさせ難くなる。
還元澱粉糖化物
 還元澱粉糖化物とは、例えば、馬鈴薯澱粉、コーンスターチ、ワキシコーンスターチ、タピオカ澱粉等の澱粉類を分解して得られるデキストリン、マルトデキストリン、水飴等と称される澱粉糖化物に水素を添加して糖化物中のカルボニル基を水酸基に還元したものであり、様々な重合度のグルコースを骨格とする糖アルコールの混合糖質である。本発明の組成物の製造に用いる、還元澱粉糖化物に対応する食品素材としては、これらを主成分とするものであれば特に限定するものではなく、液体状、粉末状のもの等を用いることができる。
 また、DEは澱粉糖化物における分解の程度を表す指標であり、DEの値が大きくなるにつれ分解の程度が高くなる。本発明では、分解の程度が低いDE12以下の澱粉糖化物の還元物を用いることが好ましく、9以下の澱粉糖化物の還元物を用いることがより好ましい。
 本発明の水溶性粉体成分分散組成物において、還元澱粉糖化物の含有量は、食用油脂100部に対して固形分換算で、好ましくは25~150部、より好ましくは50~100部である。還元澱粉糖化物の含有量が少なすぎると、食用油脂を分散させておくことができず、層分離が生じやすい。反対に多すぎると、上述の相転移を生じさせ難くなる。
多糖
 多糖としては、食用に適したものであれば、特に制限はない。多糖に対応する食品素材としては、例えば、馬鈴薯澱粉、コーンスターチ、タピオカ澱粉、小麦澱粉、米澱粉、これらの澱粉をアルファ化、架橋などの処理を施した化工澱粉、並びに湿熱処理澱粉などの澱粉、キサンタンガム、タマリンド種子ガム、ローカストビーンガム、ジェランガム、グアーガム、アラビアガム、サイリュームシードガム等のガム質、グルコース、ソルビトール、シュクロース、トレハロース、ペクチン、イヌリン、セルロース等が挙げられる。本発明においては、これら多糖の中でも、離水防止効果が得られやすいことから、澱粉及び/又はガム質を用いることが好ましい。なお、本発明の多糖には、上述の還元澱粉糖化物を含まない。
 また、本発明の組成物の製造に用いる多糖の形態としては、これを主成分とする食品素材であれば、特に限定するものではなく、液体状、粉末状のもの等を用いることができる。
 水溶性粉体成分分散組成物における多糖の含有量は、離水防止効果が得られやすい点から、0.01~20%が好ましく、0.1~10%がより好ましい。これに対し、多すぎると食感が重たくなる傾向があり好ましくない。
食用油脂
 食用油脂とは、トリアシルグリセロール又はジアシルグリセロールを主成分とする脂質のことであり、例えば、菜種油、コーン油、綿実油、サフラワー油、オリーブ油、紅花油、大豆油、パーム油、乳脂、牛脂、豚脂、卵黄油等の動植物油及びこれらの精製油、MCT(中鎖脂肪酸トリグリセリド)、ジグリセリド、硬化油、酵素処理卵黄油等のように化学的あるいは酵素的処理を施して得られる油脂等が挙げられる。このような食用油脂は、1種で使用してもよく、2種以上を組み合わせて使用してもよい。2種以上を配合することで、濃厚な味を得ることができる。
 食用油脂の含有量は、水溶性粉体成分分散組成物に対して、離水防止効果が得られやすい点から、好ましくは20~60%、より好ましくは30~50%である。食用油脂の含有量が多すぎたり少なすぎたりすると、上述の相転移を生じさせ難くなる。
水分含量
 本発明の水溶性粉体成分分散組成物は、水分含量が好ましくは5~21%、より好ましくは10~18%である。水分が過度に多いと、本発明の水溶性粉体成分分散組成物を高水分食材と配合した場合に、高水分食材から染み出た水によって上述の相転移を生じさせ難くなり、水分含量が過度に少ないと油相分離が生じ易くなる。
 ここで、水溶性粉体成分分散組成物における水分には、水溶性粉体成分分散組成物の製造時に、水として添加する量に限られず、前述のタンパク質、還元澱粉糖化物及び多糖を本発明の組成物に含有させるために使用する個々の食品素材に含まれる水分も含まれる。例えば、後述する実施例のように卵黄を使用する場合、卵黄に含まれる水分は、ここでいう水分を構成し、また、還元澱粉糖化物として含水した液糖を使用する場合、当該液糖に含まれる水分もここでいう水分を構成する。水溶性粉体成分分散組成物の水分含量は、減圧加熱乾燥法により測定できる。
水溶性粉体成分
 本発明の組成物では、水溶性粉体成分が非溶解状態で分散している。この水溶性粉体成分の組成は明確ではないが、上述したタンパク質、還元澱粉糖化物及び多糖の一種又は複数種から形成されていると考えられ、タンパク質、還元澱粉糖化物及び多糖の合計含有量を本発明の組成物中に十分な量で含有させることにより、水溶性粉体成分を非溶解で分散させることができる。
 また、本発明の組成物において水溶性粉体成分を非溶解で分散させるためには、タンパク質、還元澱粉糖化物又は多糖を本発明の組成物に含有させるために配合する個々の食品素材の固形分の合計量を十分に高めることが好ましい。この3成分の食品素材の固形分の好ましい合計量は、個々の食品素材の種類等にもよるが、20~60%、より好ましくは30~50%、更に好ましくは35~45%である。少なすぎると、これらと食用油脂及び水分を含有する組成物において水溶性粉体成分が非溶解で分散状態し難くなり、その組成物を高水分食材に配合した場合の吸水作用が劣り、食品からの離水を防止し難くなる。反対に多すぎると、水溶性粉体成分分散組成物の粘性が増加して高水分食材と和え難くなる。
その他の原料
 本発明の水溶性粉体成分分散組成物は、上述の各成分の他、食塩、砂糖、胡椒等の各種調味料、アスコルビン酸又はその塩、ビタミンE等の酸化防止剤、色素、香辛料、更に、タマネギ、ベーコンチップ等の具材を含んでいてもよい。
2.水溶性粉体成分分散組成物を用いた食品
 本発明の水溶性粉体成分分散組成物の使用方法としては、高水分食材を原料とする料理に本発明の水溶性粉体成分分散組成物を、調味液、ソース等の一部として、あるいは調味液、ソース等に代えて配合すればよい。
 ここで、高水分食材としては、キャベツ、レタス、キュウリ、ダイコン等の野菜、リンゴ、パイナップル等の果物、茹で卵、スクランブルエッグ等の加熱凝固卵加工品、豆腐等が挙げられる。高水分食材の水分含量が、好ましくは50%以上、より好ましくは70%以上の場合に本発明の水溶性粉体成分分散組成物による離水防止効果を顕著に発揮させることができる。
 本発明の水溶性粉体成分分散組成物を高水分食材に配合した食品の具体例としては、コールスローサラダ、ポテトサラダ、タマゴサラダ等のサラダ、炒め料理、和え物等の調理食品が挙げられる。ここで、食品中における水溶性粉体成分分散組成物の配合量は、食品の種類等にもよるが、通常1%以上であり、3~98質量%であることが好ましく、5~70%であることがより好ましい。より具体的には、例えば、炒め野菜の場合、水溶性粉体成分分散組成物の配合量は15~40%、コールスローサラダの場合、10~30%、タマゴサラダの場合、10~30%である。
3.水溶性粉体成分分散組成物の製造方法
 本発明の水溶性粉体成分分散組成物は、次の工程1及び2を順次行うことにより容易に製造できることができる。
工程1
 水分、タンパク質、還元澱粉糖化物及び多糖に対応する食品素材の一部であって形態が水溶性粉体のものと食用油脂とを混合することにより水溶性粉体の油中分散物を調製する。より具体的には、水分、タンパク質、還元澱粉糖化物及び多糖を含有させるための個々の食品素材のうち水溶性粉体のもの、好ましくは水分含量が10%以下、より好ましくは5%以下の水溶性粉体を順次食用油脂に混合するか、あるいは、予めこれらの水溶性粉体を混合して食用油脂と混合することにより、水溶性粉体の少なくとも一部が食用油脂に非溶解で分散した混合物を調製する。
 タンパク質、還元澱粉糖化物又は多糖を含有させるために配合する食品素材のうち、工程1で食用油脂と混合する水溶性粉体の合計量は、好ましくは5~40%、より好ましくは10~30%、さらに好ましくは15~25%である。
 混合操作は、ニーダーやホバートミキサー等の撹拌機を用いて室温で行うことができるが、加熱すると味がなじみ調理感が出るので加熱をしながら混合してもよい。
工程2
 本発明の水溶性粉体成分分散組成物を構成する水分、タンパク質、還元澱粉糖化物、多糖に対応する食品素材のうち、工程1で用いたものの残部を工程1で得た水溶性粉体の油中分散物に混合することにより水溶性粉体成分分散組成物を得る。
 この場合の水分の添加量は、水溶性粉体成分分散組成物が、上述した相転移を生じる性質、つまり、「全光線透過率が13~35%、水で3倍に希釈した場合の全光線透過率が0.1~12%である」という性質を満たす量とすればよいが、好ましくは水溶性粉体成分分散組成物の水分含量が好ましくは5~21%、より好ましくは10~18%となる量とする。
 水分の添加方法としては、水を配合してもよく、あるいは、水分を含む食品素材、例えば、還元澱粉糖化物として含水した液糖を配合することにより行ってもよく、また、水分を含む卵黄を配合することにより行ってもよい。
 このように、本発明の組成物に含有させるタンパク質、還元澱粉糖化物及び多糖のうち、少なくとも一部を水溶性粉体の形態で工程1で添加し、残部を工程2で添加するにあたり、或るタンパク質を含有させるための食品素材の形態として、粉体のものと、その粉体よりも水分含量の高い液状のものとが存在する場合(例えば、乾燥卵黄と生卵黄)、粉体のものは工程1で添加し、液状のものは工程2で添加することが好ましい。
[実施例1]
水溶性粉体成分分散組成物
 表1の配合割合で水溶性粉体成分分散組成物を製造した。表1中、角括弧内の数値は、食用油脂100部に対する還元澱粉糖化物の固形分換算した配合割合(部)であり、丸括弧内の数値は、当該成分の固形分としての含有量である。また、タンパク質の配合割合を示すセルにおいて、左側の数値は、タンパク質を含有させるための食品素材の割合(%)、右側の数値は、その食品素材に含まれるタンパク質の割合(%)を示している。なお、各食品素材におけるタンパク質の割合としては、食品成分データベース(文部科学省)に掲載されている数値を用いた。
 実施例1において、食用油脂としては菜種油を使用し、還元澱粉糖化物としては日研化成株式会社製、「エスイー30」(70%水溶液、糖組成の43%以上が5糖以上の糖アルコール、原料デキストリンのDE値30)を使用した。この場合、タンパク質、還元澱粉糖化物及び多糖を含有させるための食品素材の固形分の合計量は43.5%であった。また、食用油脂100部に対する還元澱粉糖化物の含有量は、固形分換算で56部、タンパク質の含有量は5.7%であった。
 この水溶性粉体成分分散組成物の製造においては、まず、ニーダーに食用油脂を投入し、次に全粉乳、チーズパウダー、キサンタンガム、食塩、グルタミン酸ナトリウム、ブラックペッパーを投入し、撹拌混合後、還元澱粉糖化物、卵黄を投入してさらに撹拌混合し、その後脱気した。続いて品温が90℃に達温するように加熱し、放冷後30gずつ容器に充填して製造した。この容器としては、小袋パウチを使用した。
 得られた水溶性粉体成分分散組成物の水分含量は減圧加熱乾燥法によれば14%であった。
 また、得られた水溶性粉体成分分散組成物を厚さ5mmの石英セルに入れ、清水を対照とした全光線透過率を濁度測定器(型名「WA2000N」、日本電色工業(株)製)を用いて、積分球式光電光度法により測定したところ(波長390nm、光路長5mm)、22%であり、この水溶性粉体成分分散組成物を水で3倍に希釈後、同様に全光線透過率を測定したところ、7%であった。これらの結果を表1に示す。また、水で希釈する前の水溶性粉体成分分散組成物と希釈した後の写真を図1に示す。
 さらに、水溶性粉体成分分散組成物を光学顕微鏡で観察(倍率:500倍)したところ、粒状物が観察され、この水溶性粉体成分分散組成物を水で3倍に希釈後、同様に光学顕微鏡で観察したところ、粒状物が観察されなかった。水で希釈する前の水溶性粉体成分分散組成物についての光学顕微鏡で観察結果についての写真を図2に、希釈した後の光学顕微鏡で観察結果についての写真を図3にそれぞれ示す。
炒め料理の製造
 得られた水溶性粉体成分分散組成物を使用し、以下のように炒め料理を製造した。つまり、フライパン上に適量の植物油(サラダ油)をひいて加熱した後、キャベツ150部、玉ねぎ30部、にんじん20部を入れ、フライパンで約180℃に保持しながら3分間炒めた。火を止めた後、実施例1で得られた水溶性粉体成分分散組成物30部をからめて炒め料理を製造した。
 さらに、得られた炒め料理を1時間保存したところ、離水も目だたず、また、野菜のシャキシャキとした食感や炒め料理全体としての食味も良好であり大変好ましいものであった。
[実施例2~4、比較例1~4]
 水溶性粉体成分分散組成物の配合割合を表1のように変更し、実施例1と同様に水溶性粉体成分分散組成物を製造した。具体的には、還元澱粉糖化物、卵黄、牛乳、清水以外の原料を食用油脂に投入し、攪拌混合後、還元澱粉糖化物、卵黄、牛乳、清水を投入した以外は実施例1と同様に水溶性粉体成分分散組成物を製造した。
 これらの組成物のタンパク質、還元澱粉糖化物及び多糖の3成分の合計の固形分含有量、水分含量、希釈前透過率、希釈後の透過率を同様に測定し、光学顕微鏡による観察を行った。結果を表1に示す。
 実施例2~4の水溶性粉体成分分散組成物を用いて実施例1と同様に炒め料理を製造し、得られた炒め料理を1時間保存したところ、実施例2、3の炒め料理は離水も目だたず、また、野菜のシャキシャキとした食感や炒め料理全体としての食味も良好であり大変好ましいものであった。実施例4の炒め料理は、野菜のシャキシャキとした食感が弱まっていたものの、離水は確認されず、概ね好ましいものであった。
 これに対し、比較例1~4の水溶性粉体成分分散組成物を用いて実施例1と同様に炒め料理を製し、保存後の状態を確認したところ、炒め料理からの離水が多く外観上好ましくなかった。また、野菜の食味もよくなかった。

[実施例5]
 表2に示すように、還元澱粉糖化物を、日研化成株式会社製、「エスイー100」(70%水溶液、糖組成の64%以上が5糖以上の糖アルコール、原料デキストリンのDE値15)に変更し、実施例1と同様に水溶性粉体成分分散組成物を製造した。
 また、得られた水溶性粉体成分分散組成物を、実施例1と同様に水で希釈し、希釈前後の透過率の変化を観察した。その結果、希釈前に比して希釈後には著しく透明度が低下した。
 この水溶性粉体成分分散組成物を用いた炒め料理を実施例1と同様に製造し、1時間保存したところ、炒め料理は離水も目だたず、また、野菜のシャキシャキとした食感や炒め料理全体としての食味も良好であり大変好ましいものであった。
[比較例5]
 表2に示すように、まず、ニーダーに還元澱粉糖化物、卵黄、全粉乳、チーズパウダー、キサンタンガム、食塩、グルタミン酸ナトリウム、ブラックペッパーを投入し、撹拌混合後、食用油脂を投入してさらに撹拌混合した以外は実施例1と同様に水溶性粉体成分分散組成物を製造した。
 得られた水溶性粉体成分分散組成物は層分離をしており、全光線透過率は測定不能であった。
[実施例6]
 表2に示すように、タンパク質として乾燥卵黄及び大豆蛋白を使用し、多糖としてα化澱粉を使用して実施例1と同様に水溶性粉体成分分散組成物を製造した。なお、乾燥卵黄は工程1において食用油脂と混合した。
 得られた水溶性粉体成分分散組成物を、実施例1と同様に水で希釈し、希釈前後の透過率の変化を観察した。その結果、希釈前に比して希釈後には著しく透明度が低下した。
 また、得られた水溶性粉体成分分散組成物を用いてコールスローサラダを次のように製造した。
 キャベツの千切り70部、茹でた5mmダイス状のにんじん5部、実施例6で得られた水溶性粉体成分分散組成物20部をムラがなくなるまで十分に混合し、コールスローサラダを製した。
 このコールスローサラダを製造後、1時間保存したところ、コールスローサラダは離水も目だたず、また、野菜のシャキシャキとした食感やコールスローサラダ全体としての食味も良好であり大変好ましいものであった。
[実施例7]
 表2に示すように、タンパク質として乾燥卵黄及び乾燥卵白を使用し、多糖としてキサンタンガムとα化澱粉を使用し、実施例1と同様に水溶性粉体成分分散組成物を製造した。なお、乾燥卵黄は工程1において食用油脂と混合した。
 得られた水溶性粉体成分分散組成物を、実施例1と同様に水で希釈し、希釈前後の透過率の変化を観察した。その結果、希釈前に比して希釈後には著しく透明度が低下した。
 また、得られた水溶性粉体成分分散組成物を用いてタマゴサラダを次のように製造した。
 殻付生卵を熱湯でボイルした(98℃で7分間)後、冷却・殻剥きして半熟卵を製した。得られた半熟卵75部を1cmのダイス状に刻んだ後、これに市販のマヨネーズ(キユーピー株式会社製)20部、実施例7で得られた水溶性粉体成分分散組成物5部を加えて和えて本発明のタマゴサラダを製した。
 このタマゴサラダを製造後、1時間保存したところ、タマゴサラダは離水も目だたず、タマゴサラダ全体としての食味も良好であり大変好ましいものであった。
[比較例6]
 表2に示す、多糖を配合しない組成で水溶性粉体成分分散組成物を製造した。
 得られた水溶性粉体成分分散組成物を、実施例1と同様に水で希釈し、希釈前後の透過率の変化を観察した。その結果、希釈前に比して希釈後には透明度が低下した。
 しかしながら、得られた水溶性粉体成分分散組成物を用いて実施例1と同様に炒め料理を製造し、1時間保存したところ、炒め料理からの離水が多く外観上好ましくなかった。また、野菜の食味もよくなかった。
[実施例8]
 表2に示すように、還元澱粉糖化物、タンパク質及び多糖の3成分の食品素材の固形分の合計含有量を実施例1に比して多い50%とし、実施例1と同様に水溶性粉体成分分散組成物を製造した。
 得られた水溶性粉体成分分散組成物を、実施例1と同様に水で希釈し、希釈前後の透過率の変化を観察した。その結果、希釈後には希釈前に比して著しく透明度が低下した。
 また、得られた水溶性粉体成分分散組成物を用いて実施例1と同様に炒め料理を製造したところ、炒めた野菜と水溶性粉体成分分散組成物が絡み難かったが、1時間保存したところ、実施例1と同様に良好であった。
[実施例9]
 表2に示すように、還元澱粉糖化物、タンパク質及び多糖の合計含有量を実施例1に比して少なくし、実施例1と同様に水溶性粉体成分分散組成物を製造した。
 得られた水溶性粉体成分分散組成物を、実施例1と同様に水で希釈し、希釈前後の透過率の変化を観察した。その結果、希釈後には希釈前に比して著しく透明度が低下した。
 また、得られた水溶性粉体成分分散組成物を用いて実施例1と同様に炒め料理を製造し、1時間保存したところ、野菜のシャキシャキとした食感が弱まっていたものの、離水は確認されず、概ね好ましいものであった。

Claims (8)

  1.  食用油脂、水分、タンパク質、還元澱粉糖化物及び多糖を含有してなり、食用油脂と非溶解状態の水溶性粉体成分とがそれぞれ分散し、全光線透過率(対照:清水、波長390nm、光路長5mm)が13~35%、水で3倍に希釈した場合の全光線透過率が0.1~12%であることを特徴とする水溶性粉体成分分散組成物。
  2.  食用油脂含有量が20~60質量%、水分含有量が5~21質量%である請求項1記載の水溶性粉体成分分散組成物。
  3.  タンパク質、還元澱粉糖化物及び多糖が、対応する食品素材の配合により含有されてなり、タンパク質、還元澱粉糖化物及び多糖に対応する食品素材の固形分の合計量が20~60質量%である請求項1又は2に記載の水溶性粉体成分分散組成物。
  4.  多糖が、澱粉及び/又はガム質である請求項1乃至3のいずれかに記載の水溶性粉体成分分散組成物。
  5.  野菜、加熱凝固卵加工品、及び豆腐の少なくとも一種を原料とする食品であって、請求項1乃至4のいずれかに記載の水溶性粉体成分分散組成物が配合されている食品。
  6.  請求項1乃至4のいずれかに記載の水溶性粉体成分分散組成物を製造するために、水分、タンパク質、還元澱粉糖化物及び多糖に対応する食品素材を使用する水溶性粉体成分分散組成物の製造方法であって、前記食品素材の一部であって水溶性粉体のものと食用油脂とを混合することにより水溶性粉体の油中分散物を調製する工程1、及び該油中分散物に、前記食品素材の残部を混合する工程2を有することを特徴とする水溶性粉体成分分散組成物の製造方法。
  7.  工程1で食用油脂と混合する水溶性粉体の水分含量が10質量%以下である請求項6記載の水溶性粉体成分分散組成物の製造方法。
  8.  工程1で食用油脂と混合する水溶性粉体の合計量が、5~40質量%である請求項6又は7記載の水溶性粉体成分分散組成物の製造方法。
