前述する乳化組成物を水性溶媒に分散または溶解することにより、上記乳化組成物が安定して分散または溶解してなる組成物を調製することができる。ここで水性溶媒としては、水、及び水に相溶性のある溶媒を挙げることができる。水に相溶性のある溶媒としては、炭素数1~6、好ましくは1~4の低級アルコール、及び前述する多価アルコールを例示することができる。低級アルコールとしては、好ましくはエタノール、及びプロピルアルコールを挙げることができる。より好ましくはエタノールである。
本発明が対象とする着香組成物としては、飲食物、アルコール含有飲食物、医薬品、医薬部外品、香粧品が例示できる。
本発明が対象とする着色組成物としても、上記と同様に、飲食物、アルコール含有飲食物、医薬品、医薬部外品、及び香粧品が例示できる。
本発明が対象とする機能性組成物としても、上記と同様に、飲食物、アルコール含有飲食物、医薬品、医薬部外品、及び香粧品が例示できる。
表1の処方に従い、乳化剤として各種のガティガム、アラビアガムまたはデカグリセリンモノオレエートを用いて、乳化香料組成物(乳化香料製剤)(実施例1~11、比較例1~7)を調製した。
表1に記載された量の油溶性素材(香料成分)と油性溶媒(グリセリン脂肪酸エステル(サラコスHG-8(日清オイリオグループ社製))、中鎖トリグリセライド[MCT](O.D.O(日清オイリオグループ社製)))を均一に混合した後、各種の乳化剤(ガティガム、アラビアガム、加工デンプン、デカグリセリンモノオレエート)を、クエン酸とともにイオン交換水に溶解して調製した乳化剤水溶液に添加し、攪拌混合した。次いで高圧ホモジナイザー(APV Gaulin社製高圧ホモジナイザー15MR-8TA)を用いて、圧力500kg/cm2で乳化処理を行い、乳化香料組成物(実施例1~11、比較例1~7)を調製した。
各種乳化剤を、水に溶解し(水に溶解しない乳化剤は、一旦加温して溶解した後に、20℃まで冷却する)、15重量%濃度の水溶液を調製する。これを20℃の恒温状態になるように調製し、B型回転粘度計(東京計器製、モデルBM型)を用いて、回転数30rpmで1分間回転させて粘度を測定した。なお、測定には、50~500mPa・sの粘度範囲ではローターNO.2、500~4000mPa・sの粘度範囲ではローターNO.3を使用した。
(2-1)乳化香料組成物(乳化香料製剤)の評価
得られた調製直後の各乳化香料組成物について、油相の乳化粒子径(メジアン径:μm)をレーザー回析式粒度分布計(SALD-2100、島津製作所製)にて測定した。
上記で調製した乳化香料組成物を用いて、下記方法に従って飲料を調製した。
果糖ブドウ糖液糖Brix75° 10.7
クエン酸(無水) 0.1
クエン酸三ナトリウム 0.015
乳化香料製剤(実施例1~11、比較例1~7) 0.5
イオン交換水にて全量 100.000。
上記飲料処方における全成分をイオン交換水に溶解したあと、93℃達温にて殺菌し、200ml容量のガラス瓶に充填・冷却した。
浮遊物を認めない:-
浮遊物を僅かに認める:+
浮遊物を少量認める:++
浮遊物を多量認める:+++。
結果を表2に示す。
乳化剤として、粘度が50~3000mPa・sの範囲にあるガティガムを、油相成分の総量100重量部に対して25重量部よりも多い割合で用いて調製した乳化香料組成物(実施例1~11)は、アラビアガムを用いて調製した乳化香料組成物(比較例4)、加工デンプンを用いて調製した乳化香料組成物(比較例6)、及びデカグリセリンモノオレエートを用いて調製した乳化香料組成物(比較例7)よりも、60℃7日保存による変化が少なく乳化安定性に優れていた。
表3の処方に従い、乳化剤として各種のガティガム、アラビアガム、β-ペクチンまたは加工デンプンを用いて、乳化色素組成物(乳化色素製剤)(実施例12~16、比較例8~14)を調製した。そして、調製した乳化色素組成物について、実験例1と同様にして、製剤安定性を評価した。また、これらの乳化色素組成物を用いて調製した飲料について、実験例1と同様にして、調製直後と振盪後の浮遊物生成量を測定し、水に対する溶解性と保存安定性を評価した。
表3に記載された量の油溶性素材(色素成分)と油性溶媒(中鎖トリグリセライド[MCT])を均一に混合した後、各種の乳化剤(ガティガム、アラビアガム、β-ペクチン、加工デンプン)を、安息香酸ナトリウム及びクエン酸とともに、イオン交換水に溶解して調製した乳化剤水溶液に添加し、攪拌混合した。次いで高圧ホモジナイザー(APV Gaulin社製高圧ホモジナイザー15MR-8TA)を用いて、圧力500kg/cm2で乳化処理を行い、乳化色素組成物(実施例12~16、比較例8~14)を調製した。
(2-1)乳化色素組成物(乳化色素製剤)の評価
得られた調製直後の各乳化色素組成物(実施例12~16、比較例8~14)について、実験例1と同様にして、油相の乳化粒子径(メジアン径:μm)をレーザー回析式粒度分布計(SALD-2100、島津製作所製)を用いて測定した。また、得られた調製直後の乳化色素組成物と、これを60℃恒温槽内で7日間保存した各乳化色素組成物を、実験例1と同様にして、1重量%濃度になるようにイオン交換水で希釈し、この水溶液の、720nmに於ける吸光度を、イオン交換水を対照にして測定し、濁度(1%E)を比較評価した。
上記で調製した乳化色素組成物(実施例12~16、比較例8~14)を用いて、下記方法に従って飲料を調製した。
果糖ブドウ糖液糖Brix75° 10.7
クエン酸(無水) 0.1
クエン酸三ナトリウム 0.015
色素製剤(実施例12~16、比較例8~14) 0.1
イオン交換水にて全量 100.000。
上記飲料処方における全成分をイオン交換水に溶解したあと、93℃達温にて殺菌し、200ml容量のガラス瓶に充填・冷却した。
結果を表4に示す。
乳化剤として、粘度が50~3000mPa・sの範囲にあるガティガムを、油相成分の総量100重量部に対して25重量部よりも多い割合で用いて調製した乳化色素組成物(実施例12~16)は、加工デンプンを用いて調製した乳化色素組成物(比較例13及び14)よりも、乳化安定性に優れており、また水への溶解性及び透明性も高かった。
表5の処方に従い、乳化剤として粘度が50~3000mPa・sの範囲にあるガティガム、及び粘度が3000mPa・sより高いガティガムを用いて、乳化ビタミン組成物(ビタミン製剤)(実施例17~21、比較例15~17)を調製した。そして、調製した乳化ビタミン組成物について、実験例1と同様して、製剤安定性を評価した。また、これらの乳化ビタミン組成物を用いて調製した飲料について、実験例1と同様して、調製直後と振盪後の浮遊物生成量を測定し、水に対する溶解性と保存安定性を評価した。
表5に記載された量の油溶性素材(脂溶性ビタミン:ミックストコフェロール)と油性溶媒(菜種油、中鎖トリグリセライド[MCT])を均一に混合した後、各種のガティガムを、安息香酸ナトリウム及びクエン酸とともに、イオン交換水に溶解して調製した乳化剤水溶液に添加し、攪拌混合した。次いで高圧ホモジナイザー(APV Gaulin社製高圧ホモジナイザー15MR-8TA)を用いて、圧力500kg/cm2で乳化処理を行い、乳化ビタミン組成物(実施例17~21、比較例15~17)を調製した。
(2-1)乳化ビタミン組成物(ビタミン製剤)の評価
得られた調製直後の各乳化ビタミン組成物について、実験例1と同様にして、油相の乳化粒子径(メジアン径:μm)をレーザー回析式粒度分布計(SALD-2100、島津製作所製)を用いて測定した。また、得られた調製直後の乳化ビタミン組成物と、これを60℃恒温槽内で7日間保存した各乳化ビタミン組成物の濁度(1%E)を、実験例1と同様に測定して、比較評価した。
上記で調製した乳化ビタミン組成物を用いて、下記方法に従って飲料を調製した。
果糖ブドウ糖液糖Brix75° 10.7
クエン酸(無水) 0.1
クエン酸三ナトリウム 0.015
乳化香料製剤(実施例17~21、比較例15~17) 0.5
イオン交換水にて全量 100.00。
上記飲料処方における全成分を溶解したあと、93℃達温にて殺菌し、200ml容量のガラス瓶に充填・冷却した。
結果を表6に示す。
乳化剤として、粘度が50~3000mPa・sの範囲にあるガティガムを、油相成分の総量100重量部に対して25重量部よりも多い割合で用いて調製した乳化ビタミン組成物(実施例17~21)は、粘度が3000mPa・sより高いガティガムを用いて調製した乳化ビタミン組成物(比較例16)や、粘度が50~3000mPa・sの範囲にあるガティガムを、油相成分の総量100重量部に対して25重量部以下の割合で用いて調製した乳化ビタミン組成物(比較例17)よりも、乳化性に優れており、また水への溶解性及び透明性も高かった。
表7の各種処方に従って、乳化剤としてガティガム(粘度:420mPa・s)を用いて、レシチンの種々の濃度(0~0.2重量%)で含有する、油溶性の香料調合品を、精製塩とクエン酸(無水)を含有するイオン交換水に分散させ、次いで、これを高圧ホモジナイザー(APV Gaulin社製高圧ホモジナイザー15MR-8TA)を用いて、圧力500kg/cm2で乳化処理を行って、乳化香料組成物(実施例22~26)を調製した。
(a)「成分2」を「成分3」に添加混合して溶解させ、均一に混合した「成分1」を添加攪拌混合した。
(b)次いで品温を40℃にして高圧ホモジナイザーで乳化した(500kg/cm2)。
得られた乳化香料製剤を、20℃で2ヶ月間、暗所条件下で保存し、保存の前後で濁度(1%E)(乳化香料の1重量%水溶液の720nmでの吸光度)を測定し、20℃における保存安定性を評価した。結果を下記表に示す。
Claims (15)
- 油相成分と水相成分が、ガティガムを用いて乳化調製されてなる乳化組成物であって、ガティガムの配合割合が、油相成分の総量100重量部に対して25重量部よりも多く、当該ガティガムが、これを15重量%水溶液になるように調製して、B型粘度計を用いて20℃条件で30rpmにて1分間測定した場合に、50~3000mPa・sの粘度を有するものであることを特徴とする、乳化組成物。
- 上記油相成分が、油溶性香料、油溶性色素、及び油溶性生理活性物質からなる群から選択される少なくとも1種を含有するものである、請求項1記載の乳化組成物。
- 上記油溶性生理活性物質が、脂溶性ビタミン、ドコサヘキサエン酸、エイコサペンタエン酸、コエンザイムQ10、α-リポ酸、α-リノレン酸、油溶性ポリフェノール、セサミン、フィトステロール、及びグリコシルセラミドからなる群から選択される少なくとも1種である、請求項2記載の乳化組成物。
- 上記油相成分が、グリセリン脂肪酸エステル及び中鎖トリグリセライドから選択される少なくとも1種を含有するものである、請求項1乃至3のいずれかに記載する乳化組成物。
- 上記グリセリン脂肪酸エステルが、平均重合度3~10のポリグリセリンに、炭素数が2~10の飽和脂肪酸を5~8分子エステル結合させたポリグリセリン脂肪酸エステルである請求項4に記載する乳化組成物。
- 上記油相成分が、さらにレシチンを含有するものである、請求項4または5に記載する乳化組成物。
- 乳化香料製剤、乳化色素製剤、及び乳化機能性製剤からなる群から選択される少なくとも1種である、請求項1乃至6のいずれかに記載する乳化組成物。
- 調製直後の乳化組成物を水に1重量%濃度に希釈した乳化組成物含有水溶液の、測定波長720nm、セル幅:1cmで水を対照に測定した吸光度が、0.5未満である、請求項1乃至7のいずれかに記載する乳化組成物。
- 乳化組成物がO/W型エマルションである、請求項1乃至8のいずれかに記載する乳化組成物。
- 油相成分と水相成分を、油相成分の総量100重量部に対して25重量部よりも多いガティガムを用いて乳化調製する工程を有する乳化組成物の調製方法であって、上記ガティガムが、これを15重量%水溶液になるように調製して、B型粘度計を用いて20℃条件で30rpmにて1分間測定した場合に、50~3000mPa・sの粘度を有するものである、上記調製方法。
- 上記油相成分が、油溶性香料、油溶性色素、及び油溶性生理活性物質からなる群から選択される少なくとも1種を含有するものである、請求項10記載の調製方法。
- 上記油相成分が、さらにレシチンを含有するものである、請求項10または11に記載する調製方法。
- 請求項1乃至9のいずれかに記載する乳化組成物を水性溶媒に溶解または分散する工程を経て調製される組成物。
- 飲食品、香粧品、医薬品または医薬部外品である請求項13に記載する組成物。
- 請求項1乃至9のいずれかに記載する乳化組成物を水性溶媒に溶解または分散する工程を有する、飲食品、香粧品、医薬品及び医薬部外品からなる群から選択される組成物の調製方法。
