Description

食品加工装置
 本開示は、食品加工装置に関する。
 特許文献1には、光触媒を食品の製造過程で用いて、加熱しない常温下において、醸造物中の微生物を殺菌する製造方法が開示されている。
特開2003-250514号公報
 しかしながら、上記特許文献1の装置または製造方法には改善の余地がある。例えば、食品に使用する反応物を効果的に改質することが難しいという課題がある。
 本開示の一態様は、このような事情に鑑みてなされたものであり、食品に使用する反応物を効果的に改質することができる食品加工装置を提供する。
 本開示の一態様の食品加工装置は、食品に用いる液状の反応物を貯める内部空間を有する反応槽と、前記反応槽内の前記反応物を冷却する冷却部と、前記内部空間に配置される触媒反応部と、を具備し、前記触媒反応部は、反応管と前記反応管の内部に設けられた光源を含み、前記反応管の外表面に光触媒が設けられ、前記反応管は前記光源から照射された光を透過し、前記反応管は第一端を有し、前記第一端は前記反応管の底面であり、前記第一端は閉じられており、前記反応管の内部には乾燥気体が充填されている。

 本開示の一態様の食品加工装置は、安定して運転させることができ、食品に使用する反応物を効果的に改質することができる。

 (開示の基礎となった知見)
 本発明者らは、「背景技術」の欄において記載した、食品の製造装置または製造方法に関し、以下の問題が生じることを見出した。
 食品の製造において、製造効率を向上する、栄養成分の含有性を良くする等の目的で、食品に使用する原料を改質することは広く行われている。
 食品の原料の改質する手法として、触媒を用いる手法があり、例えば、マーガリンの製造において、原料となる油脂成分を水素化するためニッケル触媒を用いる手法がある。食品の製造に固定化した酵素を用いることも、触媒利用の一つとすることができる。
 食品の原料を改質する観点ではないが、製造過程での殺菌目的で触媒を用いることもあり、例えば、特許文献1では、光触媒を食品の製造過程で用いて、加熱しない常温下において、醸造物中の微生物を殺菌する製造方法が検討されている。
 従来の触媒を用いる手法は、食品に使用する原料として単一成分の原料の改質には効果的であるが、化学工学的な手法の延長であるため装置構成に制限があり、多用途への展開に用いる触媒に適した構成に対応するためには改善の余地がある。
 従来の光触媒を用いた製造方法に用いる装置も殺菌目的であるため、食品の原料を改質することに適した構成に対応するには改善の余地がある。例えば、外表面に光触媒が設けられた反応管の内部から光触媒に光を照射することで、反応管の外表面と接触している反応物における反応を促進する食品加工装置において、効果的に食品の原料を改質しにくい場合がある。食品加工装置が特に反応物を低温に維持する場合に、低温の反応物により冷却された反応管と、発熱する光源との間の温度差によって、反応管の内部の気体には、対流が生じ、反応管の内部に反応管の外気を取り込むおそれがある。外気が湿気を多く含む場合、反応管の内面には、取り込まれた気体が反応管の外部の反応物によって冷却されることで結露が発生する。これにより、光源からの光が反応管の外部に届きにくくなり、光触媒により反応物の反応を促進する効果が低減するおそれがある。
 本発明者らは、光触媒により反応物の反応を促進する効果が低減しにくい食品加工装置を見出すに至った。
 本開示の一態様は、このような事情に鑑みてなされたものであり、新たに食品の原料を改質する光触媒を用いた食品加工装置を提供する。
 本開示の一態様に係る食品加工装置は、食品に用いる液状の反応物を貯める内部空間を有する反応槽と、前記反応槽内の前記反応物を冷却する冷却部と、前記内部空間に配置される触媒反応部と、を具備し、前記触媒反応部は、反応管と前記反応管の内部に設けられた光源を含み、前記反応管の外表面に光触媒が設けられ、前記反応管は前記光源から照射された光を透過し、前記反応管は第一端を有し、前記第一端は前記反応管の底面であり、前記第一端は閉じられており、前記反応管の内部には乾燥気体が充填されている。
 これによれば、反応管の内部には、乾燥気体が充填されているため、反応管の内部の湿度を所定の湿度よりも低い状態とすることができる。このため、反応管の内面で冷却されることで、反応管の内面に結露が発生することを抑制でき、所定の光量以上の光を光源から光触媒へ照射することができる。これにより、食品加工装置を安定して運転させることができ、食品に使用する反応物を効果的に改質することができる。
 前記触媒反応部は、さらに、封止部で封止された第二端を有し、前記第二端は前記第一端と対向してもよい。
 これにより、反応管の内部の気体が乾燥した状態に維持することができる。よって、反応管の内部の気体が、反応管の内面で冷却されることで、反応管の内面に結露することを抑制することができる。
 前記触媒反応部は、さらに、前記反応管の内部に配置され、水分と接触することで変色する変色部材を有してもよい。
 これにより、食品用反応装置の操作者は、反応管の内部に水分が混入したことを視覚的に適切に判断することができる。このため、例えば、光源からの光が光触媒へ届きにくい状態の反応管を、結露が発生していない反応管に交換させるなどのような、結露の発生に対する対策を、操作者に行わせることができる。よって、反応管の内面に結露が発生したとしても、光触媒への光源からの所定の光量以上の光を光源から照射することができる。
 前記触媒反応部は、さらに、前記反応管の内部に配置され、水分を検知する水分検知センサを有してもよい。
 これにより、食品用反応装置は、反応管の内部への水分の混入を物理量として適切に判断することができる。よって、食品用反応装置は、反応管の内部における結露の発生に対する対策を適切に行うことができる。
 さらに、前記水分検知センサにより水分が検知された場合、前記光源の発光を停止させる制御部を備えてもよい。
 これによれば、食品用反応装置は、結露が発生したときに、光源の発光するため、光触媒により反応物の反応を促進する効果が低減している場合に、反応物を反応させる処理を停止することができる。よって、反応物の反応速度が低下している状態で食品用反応装置を運転させ続けることを抑制でき、食品用反応装置の消費電力を低減することができる。
 前記触媒反応部は、さらに、前記第二端に配置され、かつ、前記反応管の内部に気体を導入する、または、前記反応管の内部から気体を放出することで前記反応管の内部の圧力を調整する圧力調整部を備え、前記第二端は前記第一端と対向してもよい。
 これによれば、反応管の内部に気体を導入する、または、反応管の内部から気体を放出することで反応管の内部の圧力を調整する圧力調整部を設けることで、反応管の内圧が上昇することを抑制することができ、構造体変形で生じる隙間から反応管の内部への外気が取り込まれることを抑制することができる。その結果、反応管に取り込まれた外気が冷却されることで反応管の内面に結露することを抑制することができる。
 前記触媒反応部は、さらに、前記反応管の内部に乾燥気体を導入する導入管と、前記導入管により導入された前記乾燥気体を前記反応管の外部へ放出する放出管と、を有してもよい。
 これによれば、反応管の内部に導入管から乾燥気体を導入しつつ、放出管から反応管の内部の気体を放出するため、反応管の内部が乾燥気体で充填された状態を効果的に維持することができる。
 前記導入管と前記第一端の距離は、前記導入管と前記第二端の距離より短く、前記導入管は、前記乾燥気体を前記反応管の内部に導入する導入口を有し、前記放出管と前記第二端の距離は、前記放出管と前記第一端の距離より短く、前記放出管は、前記反応管の内部の気体を放出する放出口を有してもよい。
 これによれば、導入管の導入口が反応管の他端よりも一端に近い位置に配置され、かつ、放出管の放出口が反応管の一端よりも他端に近い位置に配置されるため、反応管の一端から乾燥気体を導入して、他端から反応管の内部の気体を放出することができる。よって、反応管の内部において底面から開口部へ乾燥気体の流れを生じさせることができ、反応管の内部の全体に亘って乾燥気体が充填された状態とすることができる。
 前記触媒反応部は、さらに、前記導入管に貫通され、かつ、前記導入管の前記導入口の周囲に配置され、かつ、前記反応管の内面との間に隙間が形成された状態で配置される整流部材を有してもよい。
 このため、導入口から導入された乾燥気体は、整流部材により、反応管の内面の近傍を流れるように整流される。よって、反応管の内面に結露が発生することを効果的に抑制することができる。
 前記光源は、紫外線を発光する蛍光灯および紫外線を発光するLED(Light Emitting Diode)の少なくとも1つを含んでもよい。
 このため、光触媒による反応物の反応を効果的に促進させることができる。
 以下、添付図面を参照しつつ、実施の形態の具体例について説明する。
 以下で説明する具体例は、いずれも上記の各態様の一例を示すものである。よって、以下で示される形状、材料、構成要素、構成要素の配置位置および接続形態等は、請求項に記載されていない限り、上記の各態様を限定するものではない。以下の構成要素のうち、本態様の最上位概念を示す独立請求項に記載されていない構成要素については、任意の構成要素として説明される。図面において同じ符号が付いたものは説明を省略する場合がある。図面は理解しやすくするためにそれぞれの構成要素を模式的に示したもので、形状および寸法比等については正確な表示ではない場合がある。
 (実施の形態1)
 食品加工装置100の構成について、図1を用いて説明する。図1は、実施の形態の食品加工装置100の一例を示す図である。
 図1に示すように、食品加工装置100は、反応槽1と、撹拌部2と、触媒反応部6と、冷却部10と、反応槽温度検知部11とを備える。
 反応槽1は、食品に用いる液状の反応物を貯める第1空間S1を有する。反応槽1は、例えば、有底円筒形の容器である。なお、反応槽1は、液状の反応物を貯める第1空間S1を有する有底筒形の容器であればよく、円筒形でなくてもよい。反応槽1には、反応槽1の上部の開口を塞ぐ蓋部5が設けられている。蓋部5は、円板状の部材であり、撹拌体4の回転軸3、複数の触媒反応部6、および、反応槽温度検知部11によって貫通される貫通孔を有する。
 撹拌部2は、回転することで反応槽1内の反応物を撹拌する撹拌体4を有する。撹拌部2は、撹拌部2の回転軸3が反応槽1の円筒の中心軸に一致するように配置される。撹拌部2は、回転軸3を回転させる、図示しないモータを含む。
 ここで、撹拌体4の具体例について説明する。
 撹拌体4は、例えば、傾斜パドル翼で実現されてもよい。撹拌体4は、反応物の粘性、撹拌部2の消費電力等の動作処理条件を考慮して最適処理条件となるように、プロペラ翼、ディスクタービン翼、および遠心式撹拌体のいずれか1つで実現されてもよい。なお、食品加工装置100に複数の撹拌体4が用いられる場合には、撹拌体4は、傾斜パドル翼、プロペラ翼、ディスクタービン翼および遠心式撹拌体のうちの少なくとも1つを含んでいればよい。
 触媒反応部6は、食品加工装置100に複数設けられる。複数(本実施の形態では6個)の触媒反応部6は、撹拌体4の回転軸3の軸方向から見た場合に、撹拌体4の回転軸3の周囲に、互いに間隔を空けた状態で配置される。6個の触媒反応部6の外側は、反応槽1の内壁面により取り囲まれる。つまり、触媒反応部6は、反応槽1の内部空間S1に配置される。これにより、撹拌部2によって反応槽1の内部の反応物が撹拌された場合に、撹拌された反応物は、複数の触媒反応部6の間を移動することができる。
 ここで、図2を用いて、触媒反応部6の構成の詳細について説明する。図2は、実施の形態1に係る触媒反応部6の構成の一例を示す図である。
 複数の触媒反応部6のそれぞれは、図2に示すように、反応管7と、光源8とを有する。触媒反応部6は、さらに、反応管7の底面7cとは反対側の端部(他端)の開口部7dと、光源8との間を封止する封止部13を有していてもよい。これにより、反応管7は、密閉され、反応管7の内部の気密性が保たれている。反応管7の内部には、乾燥気体12が充填されている。
 反応管7は、光触媒が設けられた外表面、および、一端が封止された底面7cを有し、光を透過する。反応管7は、具体的には、有底円筒形のガラス基材7aと、ガラス基材7aの外表面に設けられた光触媒の薄膜7bとを有する。ガラス基材7aは、ガラス基材7aの円筒形の筒軸方向が撹拌体4の回転軸3に沿った向きで配置される。
 ガラス基材7aの外表面に設けられる光触媒の薄膜7bは、例えば、一般的なゾルゲル法で形成される。光触媒の薄膜7bは、具体的には、TiOにより構成される。光触媒の薄膜7bの形成方法において用いられるゾルゲル液を、ガラス基材7aの外表面に塗布し、ゾルゲル液が塗布された状態のガラス基材7aを、回転機を用いて回転させる。これにより、ガラス基材7aの外表面の全体に亘って、ゾルゲル液が均一に塗布される。ゾルゲル液が塗布されたガラス基材7aは、ゾルゲル液が乾燥した後に、電気炉において乾燥後、500℃以上の高温で加熱されることで、ガラス基材7aの外表面に光触媒の薄膜7bが焼成される。
 光源8は、反応管7の内側から光触媒に光を照射する。光源8は、ガラス基材7aの底面7cとは反対側の開放部分からガラス基材7aの内部に挿入されている。光源8は、光触媒での励起子の発生を効果的に行うため、具体的には、260nm~400nm程度を中心波長とする光源を含む。光源8は、例えば、紫外線315nm~400nmの波長域(UV-A)の波長を中心波長とする蛍光灯を含む。このため、光触媒による反応物の反応を効果的に促進させることができる。
 光源8は、ガラス基材7aの外表面に設けられた薄膜7bに光を効果的に照射するため、反応管7の外表面の薄膜7bに対向するように、配置されてもよい。なお、光源8は、例えば、高圧水銀ランプ、紫外線発光のLED(Light Emitting Diode)等を含んでもよい。LEDは、発光効率が高く発熱が少ないので、発熱の大きな光源と比較すると反応管7の内部に発生する対流の強さを小さくでき、外気を反応管7に取り込むことを抑制することができる。同様に発熱が少ない蛍光灯を使用してもよい。
 冷却部10は、反応槽1内の反応物を冷却する。冷却部10は、複数の触媒反応部6の外側を囲んで配置される。具体的には、冷却部10は、反応槽1を囲む外壁10aと、反応槽1と外壁10aとの間の第2空間S2を流通する冷却媒体(冷媒)とを有する。
 冷却部10は、反応槽温度検知部11で検出された温度に基づいて動作することにより、反応物の温度を調整する。具体的には、冷却部10は、第1温度よりも高い温度の反応物を第1温度に冷却する場合、第1温度以下の冷媒を第2空間S2に流通させる。これにより、冷却部10は、冷媒と反応物とを反応槽1を挟んで熱交換させることで反応物を冷却する。反応物と熱交換することで、温度が上昇した冷媒は、例えば、第2空間S2外に配置されている図示しない熱交換器において第1温度以下に冷却され、その後に第2空間S2に戻るように図示しない配管で接続されていてもよい。冷媒は、例えば、図示しない循環ポンプなどにより第2空間S2と上記熱交換器との間を循環していてもよい。この場合、冷却部10は、循環ポンプの動作を開始させることにより、反応物の冷却を開始してもよい。
 反応槽温度検知部11は、反応槽1内に配置され、反応物の温度を検出する。反応槽温度検知部11は、例えば、サーミスタ、熱電対などにより構成される。反応槽温度検知部11は、蓋部5を貫通しており、例えば、蓋部5に固定されている。
 次に、食品加工装置100の動作について、図1および図2を用いて説明する。
 まず、食品加工装置100では、反応槽1に、食品の原料となる反応物が投入される。次に、食品加工装置100は、光触媒処理を開始する。具体的には、光触媒処理では、食品加工装置100は、触媒反応部6の光源8を点灯することで、反応管7の内部から光触媒の薄膜7bへの光照射を開始する。光触媒処理では、食品加工装置100は、撹拌部2のモータを駆動させることにより撹拌体4の回転軸3を回転させ、反応槽1内の反応物の撹拌を行う。合わせて、光触媒処理では、食品加工装置100は、冷却部10の循環ポンプを駆動させることで、冷却部10の第2空間S2へ冷却媒体を供給する。
 このとき、食品加工装置100は、反応物の温度を反応槽温度検知部11で検出し、反応物が予め設定した温度になるように、第2空間S2に供給する、冷却媒体の温度、及び/または、冷却媒体の供給量を調整する。食品加工装置100は、例えば、第2空間S2外に設置されている熱交換器での熱交換量を調整することで冷却媒体の温度を調整する。食品加工装置100は、具体的には、熱交換器が空冷であれば熱交換器における空冷を促進するファンの風量を調整することで冷却媒体の温度を調整してもよいし、熱交換器が水冷であれば熱交換器における水冷を促進するポンプによる水量を調整することで冷却媒体の温度を調整してもよい。食品加工装置100は、反応槽1の外側の第2空間S2と熱交換器との間で冷却媒体を循環させるための循環ポンプによる循環量を調製することで冷却媒体の第2空間への供給量を調整してもよい。このように、冷却媒体の温度、及び/または、冷却媒体の供給量は、熱交換器、循環ポンプおよび配管を含む循環装置(図示せず)等を用いて調整することができる。
 例えば、食品加工装置100における反応物の反応がビール酵母の発酵であれば、低温(例えば5℃程度)で熟成させてもよい。この場合、冷却部10において目標とされる予め設定される温度は、5℃である。
 食品加工装置100では、光照射された光触媒と食品の原料となる反応物とを接触させ、光触媒によって反応物を改質させる。例えば、ビールの原料を改質する場合、麦汁中の糖分をあらかじめ分解させることで、発酵期間を短くすることができる。
 本実施の形態に係る食品加工装置100によれば、反応管7の内部には、乾燥気体12が充填されているため、反応管7の内部の気体の湿度を所定の湿度よりも低い状態とすることができる。このため、反応管の内面で冷却されることで、反応管の内面に結露が発生することを抑制でき、所定の光量以上の光を光源から光触媒へ照射することができる。これにより、食品加工装置100を安定して運転させることができ、食品に使用する反応物を効果的に改質することができる。
 (実施の形態1の変形例)
 (変形例1)
 実施の形態1の変形例1について図3を用いて説明する。図3は、実施の形態1の変形例1に係る触媒反応部6aの構成の一例を示す図である。
 触媒反応部6aは、反応管7の内部に乾燥剤14が配置される構成であってもよい。これにより、反応管7の内部は、乾燥気体で充填されることになる。乾燥剤14は、例えば、シリカゲルであってもよい。
 このように、触媒反応部6aは、反応管7の内部に配置される乾燥剤14を有していてもよい。これにより、結露発生の可能性を低減することができる。なお、反応管7の内部には、乾燥気体12が充填され、かつ、乾燥剤14が配置されてもよい。
 触媒反応部6aでは、封止部13により反応管7の開口部7dが封止されていても、微細な隙間、及び/または、材料変形によって生じる隙間等から水分を含む外気が反応管7の内部に混入する可能性がある。このように、水分を含む外気が混入した場合であっても、反応管7の内部には、乾燥剤14が配置されているため、結露発生の可能性を低減することができる。
 (変形例2)
 実施の形態1の変形例2について図4を用いて説明する。図4は、実施の形態1の変形例2に係る触媒反応部6bの構成の一例を示す図である。
 変形例2に係る触媒反応部6bは、実施の形態1に係る触媒反応部6の構成にさらに、変色部材15を有する。変色部材15は、反応管7の内部に配置され、水分と接触することで変色する部材である。変色部材15は、例えば、反応管7の内面に配置される。変色部材15は、例えば、塩化コバルトを添加したシリカゲル、塩化コバルト紙等をであってもよい。
 これにより、実施の形態1の変形例2に係る食品加工装置の操作者は、反応管7の内部に水分が混入したことを視覚的に適切に判断することができる。このため、例えば、光源8からの光が光触媒へ届きにくい状態の反応管7を、結露が発生していない反応管7に交換させるなどのような、結露の発生に対する対策を、操作者に行わせることができる。よって、反応管7の内面に結露が発生したとしても、光触媒への光源8からの所定の光量以上の光を光源から照射することができる。
 (変形例3)
 実施の形態1の変形例3について図5~図7を用いて説明する。図5は、実施の形態1の変形例3に係る触媒反応部6cの構成の一例を示す図である。図6は、実施の形態1の変形例3に係る食品加工装置200の機能ブロック図である。図7は、実施の形態1の変形例3に係る食品加工装置200の動作の一例を示すフローチャートである。
 図5に示すように、変形例3に係る触媒反応部6cは、実施の形態1に係る触媒反応部6の構成にさらに、水分検知センサ17を有する。水分検知センサ17は、反応管7の内部に配置され、水分を検知する。具体的には、水分検知センサ17は、封止部13を貫通して封止部13に配置される棒状または線状の部材の端部に設けられる。
 図6に示すように、食品加工装置200は、制御部16を備えていてもよい。制御部16は、食品加工装置200の動作を制御する。制御部16は、水分検知センサ17の検知結果を取得し、取得した検知結果に応じて、撹拌部2、光源8および冷却部10の少なくとも1つを制御する。制御部16は、例えば、水分検知センサ17により水分が検知された場合、つまり、反応管7の内部に水分が発生したことが検知された場合、光源8の発光を停止させる制御を行ってもよい。制御部16は、この場合、撹拌部2の動作、および、冷却部10の動作を停止してもよい。制御部16は、例えば、プロセッサ、および、プロセッサにより実行されるプログラムを格納しているメモリにより実現されてもよい。制御部16は、例えば、専用回路により実現されてもよい。
 次に、食品加工装置200の動作について、図7を用いて説明する。
 まず、制御部16は、光触媒処理を開始する(S11)。光触媒処理は、実施の形態1で説明した処理と同様であるため説明を省略する。
 次に、制御部16は、水分検知センサ17により水分が検知されたか否かを判定する(S12)。
 制御部16は、水分検知センサ17により水分が検知されていないと判定した場合(S12でNo)、光触媒処理が開始されてから所定時間経過したか否かを判定する(S13)。具体的には、制御部16は、光触媒処理が開始されるとカウントを開始しており、カウントが所定時間と等しいか否かを判定することで、光触媒処理が開始されてから所定時間経過したか否かを判定する。なお、所定時間は、光触媒処理において設定されている発光時間であり、制御部16が有する図示しないメモリに記憶されている。
 制御部16は、水分検知センサ17により水分が検知されたと判定した場合(S12でYes)、または、光触媒処理が開始されてから所定時間経過したと判定した場合(S13でYes)、光触媒処理を停止する(S14)。制御部16は、光触媒処理が開始されてから所定時間経過してないと判定した場合(S13でNo)、ステップS12に戻る。
 これにより、食品加工装置200は、反応管7の内部への水分の混入を物理量として適切に判断することができる。よって、食品加工装置200は、反応管7の内部における結露の発生に対する対策を行うことができる。具体的には、食品加工装置200は、対策として、光触媒処理を停止する制御を行うことができる。
 (変形例4)
 反応管7の内部は、反応管7の開口部7dが封止部13により封止された状態で、減圧されていてもよい。反応管7の内部は、真空であってもよい。これにより、反応管7の内面に結露が発生することを抑制することができる。
 (実施の形態2)
 次に、実施の形態2における食品加工装置の触媒反応部について、図8を用いて説明する。図8は、実施の形態2に係る触媒反応部6dの構成の一例を示す図である。
 実施の形態2に係る食品加工装置は、実施の形態1に係る食品加工装置100と比較して、触媒反応部6dの構成が異なり、その他の構成は同じである。このため、触媒反応部6dの構成について説明する。
 触媒反応部6dは、実施の形態1に係る触媒反応部6の構成にさらに、圧力調整部18を有する。圧力調整部18、反応管7の内部に気体を導入する、または、反応管7の内部から気体を放出することで反応管7の内部の圧力を調整する。圧力調整部18は、反応管7の他端、つまり、封止部13を貫通して封止部13に配置される。圧力調整部18は、例えば、反応管7の内部の圧力を外部調圧する圧力弁である。
 反応管7では、光源8の発光時の発熱により内部の気体が膨張し、反応管7内部の圧力が高くなる。圧力調整部18は、膨張した気体を反応管7の内部から放出することで、所定の圧力より反応管7の内圧が上昇することを抑制することができ、封止部13等の材料変形による微細な隙間の発生を抑制することができる。その結果、外気が反応管7の内部に混入する可能性を小さくできる。
 なお、実施の形態2に係る食品加工装置は、実施の形態1の食品加工装置100と同じ動作をするので、その詳細説明は省略する。
 (実施の形態3)
 次に、実施の形態3における食品加工装置の触媒反応部について、図9~図11を用いて説明する。図9は、実施の形態3に係る触媒反応部6eの構成の第1の例を示す図である。図10は、実施の形態3に係る触媒反応部6fの構成の第2の例を示す図である。図11は、実施の形態3に係る触媒反応部6gの構成の第3の例を示す図である。なお、図中における矢印は、反応管7の内部における気体の流れを示す。
 実施の形態3に係る食品加工装置は、実施の形態1に係る食品加工装置100と比較して、触媒反応部6e、6f、6gの構成が異なり、その他の構成は同じである。このため、触媒反応部6e、6f、6gの構成について説明する。
 まず、第1の例の触媒反応部6eの構成について図9を用いて説明する。
 触媒反応部6eは、実施の形態1に係る触媒反応部6の構成にさらに、導入管19と、放出管20とを有する。導入管19は、反応管7の内部に乾燥気体を導入する管状の部材である。放出管20は、導入管19により導入された乾燥気体を反応管7の外部へ放出する管状の部材である。導入管19は、反応管7の一端(底面7c)よりも他端(開口部7d)に近い位置に配置され、かつ、乾燥気体を反応管7の内部に導入する導入口19aを有する。放出管20は、反応管7の一端(底面7c)よりも他端(開口部7d)に近い位置に配置され、かつ、反応管7の内部の気体を放出する放出口20aを有する。つまり、導入口19aおよび放出口20aは、反応管7の開口部7dの近傍に配置されている。
 導入管19および放出管20は、封止部13を貫通して封止部13に配置される。導入管19および放出管20は、封止部13の異なる位置に配置され、例えば、導入管19は、光源8を挟んで放出管20とは反対側に配置される。
 これによれば、反応管7の内部に導入管19から乾燥気体を導入しつつ、放出管20から反応管7の内部の気体を放出するため、反応管7の内部の気体を乾燥気体に入れ替えることができる。このため、反応管7の内部が乾燥気体で充填された状態を効果的に維持することができる。
 次に、第2の例の触媒反応部6fの構成について図10を用いて説明する。
 触媒反応部6fは、第1の例の触媒反応部6eの導入管19の代わりに、導入管19Aを有する構成である。導入管19Aは、導入管19と比較して、管の長さが長い点が異なる。導入管19Aは、反応管7の他端(開口部7d)よりも一端(底面7c)に近い位置に配置され、かつ、乾燥気体を反応管7の内部に導入する導入口19Aaを有する。つまり、導入口19Aaは、反応管7の底面7cの近傍に配置されている。
 このため、反応管7の一端(底面7c)付近から乾燥気体を導入して、他端(開口部7d)の近傍から反応管7の内部の気体を放出することができる。よって、反応管7の内部において底面7cから開口部7dへ乾燥気体の流れを生じさせることができ、反応管7の内部の全体に亘って乾燥気体が充填された状態とすることができる。
 次に、第3の例の触媒反応部6gの構成について図11を用いて説明する。
 触媒反応部6gは、第2の例の触媒反応部6fの構成にさらに、整流部材21を有する。整流部材21は、導入管19Aに貫通され、かつ、導入管19Aの導入口19Aaの周囲に配置され、かつ、反応管7の内面との間に隙間が形成された状態で配置される部材である。整流部材21は、例えば、板状の部材であり、例えば、円板状の部材である。整流部材21は、光源8に貫通されていてもよい。整流部材21は、反応管7を上方からみた場合、整流部材21の外周縁の全周と反応管7の内面との間に隙間が形成された状態で配置されていてもよい。
 このため、導入管19Aの導入口19Aaから導入された乾燥気体は、整流部材21により反応管7の内面の近傍を流れるように整流される。よって、反応管7の内面に結露が発生することを効果的に抑制することができる。
 なお、整流部材21の外周縁の全周と反応管7の内面との間に隙間が形成されていなくてもよく、整流部材21の外周縁の一部と反応管7の内面の一部との間に隙間が形成されていればよい。つまり、整流部材21の一部と反応管7の内面とは接触していてもよい。
 なお、実施の形態3に係る食品加工装置は、実施の形態1の食品加工装置100と同じ動作をするので、その詳細説明は省略する。
 以上、本開示の一つまたは複数の態様に係る食品加工装置について、実施の形態に基づいて説明したが、本開示は、この実施の形態に限定されるものではない。本開示の趣旨を逸脱しない限り、当業者が思いつく各種変形を本実施の形態に施したものや、異なる実施の形態における構成要素を組み合わせて構築される形態も、本開示の一つまたは複数の態様の範囲内に含まれてもよい。
 本開示の一態様は、例えば、食品の原料を改質する光触媒を用いた食品加工装置に利用できる。

Claims (10)

  1.  食品に用いる液状の反応物を貯める内部空間を有する反応槽と、
     前記反応槽内の前記反応物を冷却する冷却部と、
     前記内部空間に配置される触媒反応部と、を具備し、
     前記触媒反応部は、反応管と前記反応管の内部に設けられた光源を含み、
     前記反応管の外表面に光触媒が設けられ、
     前記反応管は前記光源から照射された光を透過し、
     前記反応管は第一端を有し、前記第一端は前記反応管の底面であり、前記第一端は閉じられており、
     前記反応管の内部には乾燥気体が充填されている
     食品加工装置。
  2.  前記反応管は封止部で封止された第二端を有し、前記第二端は前記第一端と対向する
     請求項1に記載の食品加工装置。
  3.  前記触媒反応部は、さらに、前記反応管の内部に配置され、水分と接触することで変色する変色部材を有する
     請求項1または2に記載の食品加工装置。
  4.  前記触媒反応部は、さらに、前記反応管の内部に配置され、水分を検知する水分検知センサを有する
     請求項1から3のいずれか1項に記載の食品加工装置。
  5.  さらに、
     前記水分検知センサにより水分が検知された場合、前記光源の発光を停止させる制御部を備える
     請求項4に記載の食品加工装置。
  6.  前記触媒反応部は、さらに、前記第二端に配置され、かつ、前記反応管の内部に気体を導入する、または、前記反応管の内部から気体を放出することで前記反応管の内部の圧力を調整する圧力調整部を備え、前記第二端は前記第一端と対向する

  7.  前記触媒反応部は、さらに、
     前記反応管の内部に乾燥気体を導入する導入管と、
     前記導入管により導入された前記乾燥気体を前記反応管の外部へ放出する放出管と、を有する
     請求項1に記載の食品加工装置。
  8.  前記導入管と前記第一端の距離は、前記導入管と前記第二端の距離より短く、
     前記導入管は、前記乾燥気体を前記反応管の内部に導入する導入口を有し、
     前記放出管と前記第二端の距離は、前記放出管と前記第一端の距離より短く、
     前記放出管は、前記反応管の内部の気体を放出する放出口を有する
     請求項7に記載の食品加工装置。
  9.  前記触媒反応部は、さらに、前記導入管に貫通され、かつ、前記導入管の前記導入口の周囲に配置され、かつ、前記反応管の内面との間に隙間が形成された状態で配置される整流部材を有する、
     請求項8に記載の食品加工装置。
  10.  前記光源は、紫外線を発光する蛍光灯および紫外線を発光するLED(Light Emitting Diode)の少なくとも1つを含む
     請求項1から9のいずれか1項に記載の食品加工装置。
