Abstract
Constituye un objeto de la presente proveer un vino de excelente sabor utilizando un jugo de uva concentrado. El vino es preparado mediante un proceso de producción de jugo de uva concentrado como materia prima para vino, que comprende: (1) un paso de prensado de la uva para obtener un jugo; (2) un paso de concentración del jugo de uva prensado; (3) un paso de inyección de un gas de ácido sulfuroso o adición de una sal de sulfito al jugo de uva concentrado, y (4) un paso de almacenamiento del jugo de uva con el ácido sulfuroso inyectado o con la sal de sulfito agregada, a baja temperatura, en tanto dicho proceso no comprende un paso de inyección de un gas de ácido sulfuroso o la incorporación de una sal de sulfito al jugo de uva prensado en una cantidad tal como para estabilizar el jugo almacenado antes de la concentración del jugo de uva prensado.
