Abstract

La presente invención se refiere a un proceso de tratamiento para tratar frutas y hortalizas con uno o más mono y diglicéridos de ácidos grasos dietarios, que provee un medio para obtener un recubrimiento homogéneo y así retrasar el envejecimiento de las frutas y hortalizas tratadas de este modo.
