Abstract
La presente divulgación proporciona métodos, composiciones, equipos y kits que comprenden varias enzimas implicadas en la hidrólisis o la descomposición de cerveza con riboflavina o un sustrato a base de malta para la producción de bebidas. La presente invención está relacionada con mejoras en la producción de la cerveza y bebidas sensibles a la luz similares, en especial, la mejora de la estabilidad del sabor de dichas bebidas sensibles a la luz mediante hidrólisis o degradación enzimática de riboflavina durante la producción de cerveza. Reivindicación 1: Una bebida de malta caracterizada porque comprende una cantidad efectiva de una riboflavinasa. Reivindicación 2: Una bebida de malta de acuerdo con la reivindicación 1, caracterizada porque la riboflavinasa comprende una riboflavina hidrolasa. Reivindicación 14: Una bebida de malta de acuerdo con la reivindicación 1, caracterizada porque además comprende la adición de una cantidad efectiva de una segunda enzima de riboflavinasa. Reivindicación 15: Una bebida de malta de acuerdo con la reivindicación 14, caracterizada porque dicha segunda riboflavinasa comprende una riboflavina reductasa.
