Rahmreifer
Zur Herstellung von Butter aus Sauerrahm hat sich eingebürgert, den Rahm vorher reifen zu lassen.
Unter Reifen ist das Sauerwerden zu verstehen, das unter Zuhilfenahme von Säureweckern bei mässiger
Erwärmung erfolgt. Die erforderliche Temperatur während der Reifung, die die Aromabildung beeinflusst, ist vom verwendeten Rahm, dessen Beschaffenheit von der Jahreszeit, dem den Tieren dargebotenen Fut- ter sowie einer Vielzahl anderer Produktionsbedingungen abhängig.
Nach Erreichung des gewünschten Säuregrades muss die Reifung unvermittelt abgebrochen und der Rahm möglichst rasch gekühlt werden. Die Erwärmung wie auch die Kühlung des Rahms soll unter anderem aus fettphysikalischen Gründen rasch aufeinander erfolgen. Die vorbestimmten Temperaturen müssen während des ganzen Vorganges genau eingehalten werden.
In den üblichen Rahmreiferwannen hat der Rahm eine grosse Berührungsfläche mit der Atmosphäre, wodurch die geschmacksverändernden Bakterien den für ihre Entwicklung notwendigen Sauerstoff in reichlicher Menge entnehmen können. Bei den bekannten Rahmreifertanks mit stehenden zylindrischen Wannen, deren Mantelfläche von einem Temperiermedium bespült wird, kann die Temperaturänderung des Rahms nicht hinreichend rasch erfolgen, weil die Fläche zur Temperaturübertragung zu klein ist.
Es sind Geräte zum Kühlen von Milch in Transportkannen bekannt, bei welchen die Kühlflüssigkeit nach dem Durchlaufen von in diesen Gefässen angeordneten Rohrschlangen den Aussenmantel der Kannen berieselt. Durch den Rückstoss der auf den Aussenmantel auftreffenden Kühlflüssigkeit wird das Kühlrohr um die Kannenachse gedreht.
Es sind aber auch Rahmreifer mit einem ringförmigen Behälter bekannt, in dem ein auf einer zentralenSäule lagerndes Rührwerk umläuft. Bei den bekannten Einrichtungen kann die Temperaturbeeinflussung des Füllgutes nicht hinreichend rasch und gleichmässig erfolgen.
Gemäss der Erfindung soll der Rahmreifer derart ausgebildet sein, dass der Innenzylinder des ringförmigen Gefässes für das Füllgut in einem Abstand von der zentralen Säule angeordnet und von dem aus den im ringförmigen Gefäss befindlichen Kühlschlangen austretenden Kühlmittel, das in an sich bekannter Weise mit dessen Rückstosskraft die Kühlschlangen dreht, beaufschlagt ist.
Das Gefäss zur Aufnahme der temperierenden Flüssigkeit hat somit die Form eines Hohlzylinders.
In dem Ringraum befindet sich ein schwingender oder drehender Wärmeaustauscher. Mindestens eine der beiden zylindrischen Aussenwände wird von der Heiz-oder Kühlflüssigkeit berieselt. Die Berieselung einer oder beider dieser Wände kann durch eine Vorrichtung erfolgen, die nach der Art eines Segner'schen Rades um eine Achse rotiert. Hiebei laufen die Rohre, durch die die Berieselungsflüssigkeit fliesst, in der zu temperierenden Flüssigkeit um. Die Rohre drehen sich infolge des Rückstosses der ausströmenden Flüssigkeit um die Achse des Behälters, durchwirbeln den Rahm und geben die Temperatur an stets andere Rahmteilchen ab. Die Rohrenden sind zweckmässig gegen die Mantelfläche geneigt, so dass das ausfliessende Medium auf die Mantelfläche aufprall.
Zur Vergrösserung der Rückstosswirkung können an dem Gefässmantel etwa radiale Prallflächen angeordnet sein. Der Vorteil der Berieselung der Innengefässwand liegt vor allem darin, dass die Kühlflüssigkeit durch die Fliehkraft der aus der rotierenden Vorrichtung austretenden Flüssigkeit an die Gefässwand geschleudert wird. Infolge des Aufprallens der angeschleuderten Kühlmittelteilchen wird eine besonders gute Benetzung der Fläche und damit eine gute Kühlwirkung erzielt.

tel 2 umgeben, an dem Füsse 3 angebracht sind. Die axiale Säule 4 des Gefässes umschliesst das Zuführungsrohr 5 des Heiz- bzw. Kühlmittels und trägt am oberen Ende Rohre 6, die um die Säule drehbar gelagert sind und das Temperiermittel zu den mit ihnen fest verbundenenRohrschlangen 7 in denRingrsum des Gefässes leiten. Die Enden 8 der Rohrschlangen ragen über die Innenmantelfläche des Gefässes und neigen sich zur Aussenwand des Gefässes. Die Rohrenden tragen Düsen, durch die die Flüssigkeit an die äussere Wand des Innenmantels gesprüht wird.
Durch den Rückstoss des ausfliessenden Kühl- oder Heizmittels wird das Rohr und die mit dem Rohr verbundeneRohrschlange im Gefäss entgegen der Ausflussrichtung um die Säule 4 gedreht. An dem oberen Ende der Aussenwand des Gefässes ist ein Kanal 9 angeordnet, aus dem die Heiz- oder Kühlflüssigkeit zur Aussenwand sprüht und dort entlangläuft. Die Heiz- bzw. Kühlflüssigkeit wird in dem Mantelgefäss 2 gesammelt und durch den Stutzen 10 abgeleitet. Das Rahmreifergefäss selbst trägt einen Stutzen 11 zum Ablassen des gereiften Rahmes. Das Gefäss ist mit einem Deckel 12 gegen die Aussenluft verschlossen.
In besonders gelagerten Fällen kann es von Vorteil sein, das Kühl- und Heizmittel zur Aussenwand des Ringgefässes ebenfalls durch ein umlaufendes'Segnerrad zuzuführen. Die Rückstosskraft des ausfliessenden Mittels und damit die Energie für den Umlauf der Rohrschlange im Gefäss 1 kann dadurch vergrössert werden, dass an der auf treffenden Ringfläche etwa radiale Prallflächen angeordnet sind. Es können aber auch die Rohre für das Kühl-bzw. Heizmittel feststehen und das Ringgefäss selbst drehend angeordnet sein. so dass das Ringgefäss ähnlich einem Turbinenrad von der austretenden Flüssigkeit in eine drehende Bewegung versetzt wird.
Ein besonderer Vorteil des erfindungsgemässenRahmreifertanks besteht darin, dass sich dasGefäss überaus einfach reinigen lässt. Es muss nach dem Abheben des Deckels 12 nur der Verteilerkopf mit den Rohren von der axialen Säule abgenommen werden.
