Abstract
In order to obtain a particularly digestible fruit juice drink with an orange juice content of more than 90%, it is proposed that the fruit juice drink have an acid content in the range from 5.5 to 7.0 g / kg, calculated as tartaric acid (pH 7), and one Brix value in the range of 11.2 - 12.0.
Description
<Desc/Clms Page number 1>
<Desc/Clms Page number 2>

The invention relates to a fruit juice drink with an orange juice content of more than 90%.
Orange fruit juice drinks are very popular, especially because of their refreshing fruity character. Orange fruit drinks are offered with different orange juice proportions, whereby only orange fruit juices with an orange juice percentage of more than 90%, in particular with an orange juice percentage of 100%, play a role in the context of these versions. While the fruity character of such a drink can be emphasized for fruit drinks with a relatively low orange juice content by adding sweeteners and flavors, this is hardly possible anymore with fruit drinks with an orange juice content of more than 90%. In the case of these fruit juice beverages, especially those with an orange juice content of 100%, such additions are undesirable, in the latter case not possible.
In the case of the previously known orange fruit drinks or orange juices, excessive consumption can have a disadvantageous effect on the stomach, in particular the gastric mucosa.
Based on this discussed prior art, the invention is therefore based on the object of providing an orange fruit drink with an orange juice content of at least 90%, the consumption of which is not only more digestible and easier on the stomach, but the taste of which is more orange and therefore fruity.
<Desc / Clms Page number 2>
This object is achieved according to the invention in that the fruit juice drink has an acid content in the range from 5.5 to 7.0 g / kg, calculated as tartaric acid (pH
7), and - has a Brix value in the range of 11.2 -12.0.
The fruit juice drink according to the invention is distinguished by a significantly reduced acidity compared to previously known orange fruit juice drinks, which measure has the consequence that the fruit juice drink is considerably more digestible and stomach-friendly. Within the claimed range of acidity, such an orange fruit drink, in particular such an orange juice, also develops a particularly fruity aroma if the beverage's Brix value is in the range between 11.2 and 12.0. This particularly fruity taste, which is also perceived as tasty and sweet, is not only new on the orange fruit juices market, but is at least in terms of acidity below the recommendation of the "Guidelines for fruit juices" from 14.
May 1982, of which acid contents of more than 8.0 g / kg are suggested in order to achieve a particularly fruity orange taste. A particularly balanced and tasty orange juice can be achieved if orange juice or orange juice concentrate is used for juice production, which has a brix-acid ratio between 19 and 24. The acidity of such an orange juice with a ratio of 20-22 and a Brix value of 11.4 is about 6 - 6.5 g / kg.
The special thing about this orange juice drink or this orange juice is that its acidity is low from the beginning and does not have to be removed, which would result in an undesirable loss of valuable ingredients, in particular flavorings.
The quantity "acid content" used in the description of the invention represents the acid content calculated as tartaric acid titrated up to pH 7 of the fruit juice drink or the juice.
