KONSERVIERUNG VON BACKWARENPRESERVATION OF BAKERY PRODUCTS

- 1/11 - NACHGEREIC. ., jThe invention relates to a method for the preservation of baked goods, wherein the baked good together with an oxygen-free. Gas is packed in a gas-tight envelope. 5 baked goods have a limited shelf life. Of particularly short shelf life are baked goods that have a high fat or butter content, as they are quickly inedible by mold and / or rancid fat. Baked goods with a high moisture content begin to dry out after a few hours. To extend the shelf life, various methods are used. Decalcifying preservatives or acid-stabilizers may be added, but these are not appreciated by many consumers. By lowering the pH value by using acidification stabilizers, the shelf life is extended. Also known is the spraying of baked goods with alcohol for preservation. The goods can be stored refrigerated, which increases the storage and transport costs. In addition, protective covers are known, which should protect the baked goods from drying out and reduce the loss of taste, many baked goods begin in protective cases but quickly mold. The shelf life of fresh baked goods is therefore one (1) day, with refrigerated, packaged baked goods a maximum of 20 days. Many outlets as well as many manufacturers are also looking for products without preservatives that can be stored and sold uncooled. All these known methods are not satisfactory for the consumer. - 1/11 - FOLLOW-UP. ., j

Beschreibung der ErfindungDescription of the invention

Object of the present invention is to provide a method for the preservation of baked goods, which is to be dispensed preservative and acidulant and alcohol and storage should take place at room temperature.

The object is solved by the features of the first claim.

The invention describes a method for the preservation of baked goods, for example, peaks, wherein the baked good is first packaged together with an oxygen-free gas or a corresponding gas mixture in a gas-tight envelope and then the baked good is pasteurized in the shell.

Detaillierte Beschreibung der ErfindungDetailed description of the invention

- 2/11 -Among the bakery products that are to be preserved, there are pinnacles, also called croissants or croissants, as well as brioche and similar baked goods. These are characterized mainly by a high fat or butter content and a high Feuch.tigkeitsan.teil. The fat or butter content in such baked goods is for example at least 15%, preferably 20-25%, the moisture content at least 35%, preferably 40-50%. In addition, these baked goods have a typical pH value of 4.5 - 5.5. Such baked goods are particularly delicate and difficult to preserve without compromising consistency, taste or shelf-life. - 2/11 -

Of course, the inventive method is also suitable for other baked goods such as breads, rolls, pita bread, flatbread, baguettes, ciabatta, toast, Frischbackbutterzöpfe, Frischoackgipfel, filled and unfilled pastry and the like. It is not advisable to add preservatives to the bavarian products, as these alter the taste negatively and are used by many consumers, for example allergic persons.

Diese Sauerstoffabwe- - 3/11 -The fresh baked goods are first packaged in a gas-tight envelope. This prevents both the drying out as well as a volatilization of the flavors. This packaging is done according to the invention preferably immediately after baking, before the baked goods has cooled, so that as far as possible no mold fungi can settle on the baked goods. When packaging, in the gas-tight envelope of the shell, the ambient air is largely removed and replaced by an oxygen-free gas or an oxygen-free gas mixture. When the air is removed, therefore, a vacuum is generated, whereby the air and thus also the oxygen is largely removed from the baked goods. In the subsequent fumigation then penetrates the gas back into the baked goods, At the time of packaging, the oxygen is fanteil in the gas to. the baked good is preferably less than 1%. Over time, the gas mixes with the remaining air in the baked good, so that the total oxygen content in the shell to 2%, but preferably still less than 5%. In baked goods and also in bread, the growth of mold fungi is the dominant cause of spoilage. In order to prevent or minimize the growth of mold fungi or other spoilage organisms, their germs are kept as far as possible from oxygen. These oxygen drops - 3/11 -

Vorzugsweise wird dazu ein Gemisch aus Stickstoff und Kohlendioxid verwendet.senhei: is achieved relatively well by a high carbon dioxide concentration in the surrounding atmosphere. The protective gases used prevent or delay negative changes in the food. Preferably, a mixture of nitrogen and carbon dioxide is used for this purpose.

Inert gases such as nitrogen, in contrast to carbon dioxide, have no direct antimicrobial effect and act solely by the displacement of oxygen. In order to achieve acceptable effectiveness, the residual oxygen content of the total gas volume in the shell should preferably be less than 2%. In practice, it is very difficult to maintain this composition during storage, since the volume-related air content of baked goods is often between 40 and 60%.

Allgemein ohne Einschränkung in allen Lebensmitteln zu-- 4/11 -A mixture of about 30% carbon dioxide and 70% nitrogen has proven to be advantageous. Since conventional packaging materials are somewhat permeable to carbon dioxide, the trapped volume of gas would shrink during storage if the carbon dioxide content is too high. However, packaging that uses predominantly or exclusively nitrogen will also result in less good results in durability extension. 80% nitrogen should therefore not be exceeded. It has proven to be advantageous to keep the nitrogen concentration within the shell about the same as outside the shell, in the ambient air. This is about 70%. A ratio comprising at least 10% carbon dioxide and / or at least 50% nitrogen leads to good results. As desired, other gases or gas mixtures can be used, as long as they are harmless to the consumer and free of oxygen. Generally without restriction in all foods too-- 4/11 -

gelassene Zusatzstoffe sind Kohlendioxid, Argon, Helium, Stickstoff, Distickstoffmonoxid und Wasserstoff.let additives are carbon dioxide, argon, helium, nitrogen, nitrous oxide and hydrogen.

In order to be able to increase the duration of preservation, for example in the case of a short-term mass production in case of great need as in actions, the gas mixture can be changed to 40% carbon dioxide and 60% nitrogen. However, it must then be expected that the gas volume in the same time decreases more because of the volatilization of carbon dioxide by the higher concentration. Although this does not affect the shelf life of the baked goods, it reduces the mechanical packaging protection offered by the baked goods cover. Another disadvantage may be the visual impression that may appear inferior to a collapsed package. As a compromise solution, this method of a gas mixture of 40% carbon dioxide and 60% nitrogen but quite satisfactory.

! __________j * ·As packaging materials for the cases known plastic films, transparent and / or printed, are suitable. As advantageous, a package of a first thermoformed plastic film has proven as a lower shell, in which the baked good is inserted. A second plastic film is then placed as a cover on the shell and preferably verachweisst on the entire edge surface with the edge of the first plastic film. These films must be particularly gas-tight and tear-resistant, even at elevated temperatures during pasteurization. Particularly suitable multilayer plastic films have been found. Following the packaging process, the baked goods are pasteurized in the sealed casing. In this process, all vegetative pathogenic germs are killed. For this, the core temperature of the baked good must be 64 ° C for at least 5 minutes. This core temperature is exactly checked during the pasteurization by means of core temperature measuring probes. The shell is exposed to it for 40-55 minutes, preferably for about 45 minutes, a temperature of 75-81 ° C, preferably about 780C. As a result, the requirement of said minimum core temperature and duration is usually met. The pasteurization can be carried out in any manner, for example in a continuous process by sprinkling with correspondingly hot water or in a so-called batch process.

Dazu sollen die Schweissnähte mindestens 5mm breit sein, vorzugsweise 7mm.By heating during the pasteurization, the gas expands in the shell. Since the volume is kept constant by the gas-tight envelope, the internal pressure in the envelope increases to about 2 or 2.5 bar. The materials used for the shell, but in particular their closure sites, such as the weld seams, must withstand this pressure, so that the shell does not burst during pasteurization. For this, the welds should be at least 5mm wide, preferably 7mm.

After pasteurization, the baked goods are preserved and can be stored uncooled for up to 20 days without suffering from freshness or loss of taste, without drying out and becoming rancid. UP ί ϊ content, because the growth of mold fungi is limited by the lack of oxygen and on the other hand the vegetative pathogenic germs are killed. The gas-tight envelope ensures a constant atmosphere during storage, in particular that no germs and no oxygen from the environment can reach the baked goods and that moisture and flavors can not escape. In addition, the baked goods in the padding of the packaging are well protected against mechanical damage during transport and storage.

Costs can be saved during production, transport and sales because no refrigeration rooms are needed. The logistics costs are also reduced with uncooled storage and transport. In addition, the bakery products can be bought in bulk by the retailers as well as by the consumers, whereby the delivery respectively the shopping no longer has to be done daily but only once or twice a week. Thus, the pro duct sizes can be optimized because stock can be produced, thus reducing setup costs. All this leads to lower sales prices for uncooled sales area.
