Gemäß Fig. 1 ist nun eine Leitung 2 für Flüssigkeiten innerhalb des Kanals 1 angeordnet und kann Wasser zu Reinigungszwecken über verschiedene Öffnungen, wie z.B. Düsen oder Löcher, in der Leitung 2, die an angemessenen Stellen innerhalb des Kanals 1 platziert sind, im Kanal verteilen und so Wände und Boden des Kanals 1 reinigen. Für Wartungszwecke kann der Kanal 1 weiterhin eine Wartungsöffnung 11 aufweisen. Nun kann direkt nach dem Kochbetrieb oder in Kochpausen ohne Hinzuziehung von besonderem Wartungs- oder Betreuungspersonal die Abluftanlage selbständig gereinigt werden.
