Abstract

In a process for simultaneous and/or consecutive removal of surface layers from essentially rotationally symmetrical objects, in particular vegetables such as asparagus, black salsify, carrots and similar, said layers are removed by at least one cutting jet of a liquid such as water or similar directed onto the periphery of the object, the cutting jet and the object being moved relative to each other. Preferably, the cutting jet(s) is (are) arranged essentially transversally to the axial direction and perpendicular to the latter for adaptation to the contour and moved in the axial direction for setting the desired layer thickness. A preferred devi ce for implementing the process, in particular for paring asparagus, has an axially-oriented frame (1), into which the asparagus (32) can be introduced essentially horizontally and stopped by means of an axially-guided gripper (17,2 1, 22) secured to the frame, and an axially-guided working ring (8) which surrounds said asparagus. Nozzles (46, 51) for generating cutting jets (55) are disposed around the circumference of the working ring (8) in such a way that when said ring is moved along its guide (4, 5, 6, 7) the periphery of the asparagus (32) is exposed to said jets. A computer-controlled opto-electronic device can be used to determine the contours of the object and to set or adjust the nozzles and hence the cutting jets during the cutting process in function of the measured contours of the object.
