Abstract

Clarification process for sweetened juice comprises a pre-clarification process consisting of pre-liming the juice, treating with a coagulation agent, decanting with the addition of a flocculating agent to provide a clear juice and sediment, then using the clear juice in a clarification process comprising liming, optional maturing and carbonation steps. An Independent claim is included for the apparatus used comprising a pre-clarification unit, consisting of a pre-liming unit, a coagulation unit, a decantation unit and a means for reintroducing the clear juice to a liming unit, a liming unit, an optional maturing unit, first and second carbonation units and first and second separation units.
