Abstract

1. Machine for producing natural leaven comprising a container (1) into which the initial products are inserted, an agitator (3 to 5) for mixing the initial products, and a manually operated or pump fed discharge apparatus, characterized in that the container (1) is provided with a double walled jacket (6, 8) with fluid duct means (7) in the interior (9) thereof, the fluid ducts being connected to a cooling device (12) for circulating cooling fluid through the fluid ducts (7) in accordance with the conditions of the applied leaven culture adjustable by means of a control unit, the temporal control of the agitator (3 to 5) being adapted to the temporal control of the cooling device (12), the agitator after insertion of the initial products being alternatively driveable in two rotation senses and being, during the ripening process of the natural leaven, being driveable in intervals for short periods, and the agitator control and the cooling device control being operated by a preferably common clock device (4).
