Abstract

Procédé de séparation d'impuretés formatrices d'odeurs indésirables de substances aromatiques du houblon, notamment d'alpha- et d'isoalpha-acides non réduits et d'alpha- et d'isoalpha-acides réduits, par extraction des impuretés de ces substances aromatiques dans de l'eau à un pH supérieur à 4, de préférence supérieur à 6 ou 7, avec ou sans la présence de sel ou de solvant, et séparation de la phase aqueuse contenant les impuretés de la substance aromatique de houblon purifiée, substances ainsi obtenues et leur utilisation.
