   Les essais exécutes jusque ce   jour   en vue de fabriquer des extraits solubles dans   l'eau,   appropriés comme épices, à partir de farine de poisson, de farine de moule et d'autres masses d'animaux marins séchés, provenant de résidus de prise de pèche et, en ayant recours à l'hydrolyse habituelle pour la fabrication d'extraits de viande, n'ont pas conduit à des résultats utilisables en pratique du fait qu'une odeur et un goût pénétrants de poisson ou une autre odeur ou un autre goût   indésira-   ble étaient conservés par les produits ainsi obtenus. 



   En-employant le procédé conforme à l'invention, on remédie en tout premier lieu à cet inconvénient du fait que le produit brut à traiter est soumis, avant de   l'hy-   drolyser, après un traitement préalable à l'aide d'agents

   L'action améliorante quant au goût produite par la fermentation à la levure peut encore être particulièrement activée si on ajoute à la masse avant le traitement par fermentation, des épices appropriées et des substances qui favorisent, dans le processus vital de la levure, une action activée de la formation de produit ayant un goût désirable. 



  Exemple d'application: 100 kg. de farine de poisson ou de farine de moules sont mélangés avec environ 800 litres d'eau à quoi l'on ajoute 5 kg. d'acide acétique. On porte ensuite la masse à 105  C et on bout durant une heure.Puis on refroidit à 508, l'acide acétique étant simultanément

 neutralisé par addition de:oarbonate d'ammonium. 



   La masse est alors additionnée de 2 kg. de maltose, d'extrait de malt ou d'une matière sucrée analogue, ensemencée de bactéries lactiques et soumise, en maintenant la température à environ 50  C, à une intense fermentation lactique d'une durée de 24 h. 



   La masse est ensuite tout d'abord neutralisée au carbonate d'ammonium et additionnée par   100   1. de masse, de 2 kg. de maltose, d'extrait de malt ou d'un produit semblable, ainsi que de 400   ce*   d'acide chlorhydrique et de 0,8 Kg.   d'épices   pour potage, 0,5 kg. d'extrait de levure, 0,25 kg. de sulfate d'ammonium, 0,15 kg. de pyrophosphate sodique ou de phosphate diammonique. La   tempé-   rature est alors   amenée 4 329   C et la masse, après   addi-   tion de 10 kg. de levure pressée ou 3 kg. de levure sèche apte à fermenter, est soumise à une fermentation de plusieurs heures jusqu'à ce que les matières sucrées soient complètement fermentées. 



   La masse est alors, après addition d'un kg. de sel de cuisine et   200   ce. d'acide acétique, amenée lentement à 105  C et bouillie pendant une heure, après quoi l'acide est à nouveau neutralisé. 



   Finalement, la masse est séchée dans un   dessica-   teur approprié, moulue et soumise à   l'hydrolyse. Celle-ci   a lieu en autoclave. 



   On ajoute   70-80   litres d'eau et 100 kg. d'acide chlorhydrique d'un poids spécifique de   1,19   par 100 kg. de matière sèche, et on porte à ébullition à 105 -110  durant 10 à 12 heures jusqu'à désagrégation complète des protéines; on neutralise alors l'acide chlorhydrique avec du   carbo-   nate sodique calciné, on laisse reposer la masse durant 1 à 2 jours et on filtre sur filtre-presse.

   L'épice proprement filtré est apte à la consommation et peut être mise en vente soit sous cette forme liquide soit sous forme de pâte après épaississement jusque 20   %   de teneur en eau.
