  WERKWIJZE VOOR DE BEREIDING VAN CONSUMPTIEPRODUCTEN OP BASIS VAN MELK. 



   De uitvinding heeft betrekking op de bereiding van consumptie- producten op basis van melk,   zoais   chocolademelk, ijsmix, consumptie-ijs en dergelijke producten. 



   Het is bekend, dat men bij dergelijke producten reeds vaak getracht heeft door toevoeging van verschillende stoffen kwaliteitsverbe- terende effecten te bereiken. Dergelijke effecten kunnen naar gelang van de omstandigheden bestaan in een stabiliseren, egaliseren of verhogen van de viscositeit, z.g. dikker maken van het product. 



   Zo is het bekend, dat men door toevoegen van natriumcarboxyme-   thylcellulvse,   hetwelk verder in deze beschrijving als CMC aangeduid   wordt.,   aan de melk, dergelijke effecten in zekere mate bereiken kan. Hierbij doet zich echter het onaangename verschijnsel voor, dat in vele gevallen een op- lossing van CMC in melk niet stabiel is. Er treedt dan meestal na enige uren een schifting op, waardoor een splitsing ontstaat in een heldere laag en in een melkige laag. Dit onaangename verschijnsel wordt vrijwel bij elke voor consumptie bruikbare CMC-soort waargenomen, en bleek vrijwel niet   afhankelijk   van het zoutgehalte van de CMC te zijn. 



   Uitvoerige proeven, welke gedaan werden teneinde na te gaan op welke wijze dit onaangename verschijnsel van een schifting voorkomen kon worden, toonden dan ook aan, dat CMC in melk vrijwel steeds tot schifting aanleiding geeft indien deze oplossing enige uren aanzichzelf wordt overge- laten. 



   Hoewel het mogelijk was een zekere verbetering te bereiken door de totale hoeveelheid gebruikte CMC, b. v. voor ijsmix 1,25 g CMC per liter melk, niet in de hele portie melk op te lossen, doch in slechts ongeveer   1/4   gedeelte van de melk, liefst bij verhoogde temperatuur en dan deze ge- concentreerde CMC-oplossing met de overige melk te mengen, werd toch geen vol-

 ledig succes ter voorkoming van de schifting bereikt. 



   Ook proeven met emulgatoren, met zeer fijn gemalen CMC en met CMC gemengd met andere verdikkingsmiddelen, gaven geen volledig stabiele oplossing in melk, al bleek wel dat in het algemeen het gebruik van CMC met een lager eigen viscositeit minder snel schifting veroorzaakt dan CMC met hoge viscositeit. Hierbij moet men dan echter om dezelfde uiteinde- lijke viscositeit te bereiken meer GMC van een lage-viscositeit gebruiken, hetgeen weer om verschillende redenen minder gunstig is. 



   Verrassenderwijs werd nu gevonden, dat het mogelijk is een volkomen stabiele oplossing van CMC in melk te bereiden, indien men de in de CMC aanwezige COONa-groepen gedeeltelijk in   00011-groepen   opzet. 



   Hoewel men à priori verwachten zou, dat iedere toevoeging van zuur de neiging tot schiften van de melk ongunstig zou beinvloeden bleek   juiste   dat een zeer goed stabiele oplossing te verkrijgen was door behalve de aan de melk toegevoegde tevens enig organisch zuur aan de melk toe te voegen. 



   Het bleek, dat steeds zeer goede resultaten verkregen kunnen worden, door er voor te zorgen., dat per 1 mol aan de OMC gebonden   COONa-   groepen 0,7 tot 1,2 mol organisch zuur in de oplossing aanwezig is. Men kan hiervoor elk voor de consumptie geschikt organisch zuur gebruiken. 



  Geschikt bleken b.v. citroenzuur, wijnsteenzuur, azijnzuur en melkzuur. 



  Dit laatste zuur kan men ook in de melk laten ontstaan, mits men de gis- ting bij het bereiken van het gewenste zuurgehalte doet ophouden. 



   Een zeer goede en bijzonder stabiele oplossing van chocolademelk kan men b. v. bereiden door hieraan per liter toe te voegen 2 g CMC en 1,8 g citroenzuur; ook wijnsteenzuur gaf zeer goede resultaten. Hetzelfde goede resultaat kan men ook bereiken door het organische zuur eerst in de juiste verhouding met de CMC te mengen, en dan de benodigde hoeveelheid van dit mengsel aan het melkproduct toe te voegen. 



   Bijzonder goede resultaten werden b.v. bereikt met een mengsel van 55 delen AKU GMC MZ 851 met 45 delen gemalen wijnsteenzuur.   AKU   CMC MZ 851 is een zuivere CMC met een substitutiegraad van 0,8, welke z. g. mid- delvisqueus is, hetgeen betekent, datn een   l%-ige   oplossing in water een viscositeit heeft, welke tussen 50-100 centipoisen ligt. 



   Blijkbaar spelen bij de bereiding van chocolademelk en ijsmix verschillende nog onbekende factoren een rol. Indien men n.l. in plaats van CMC,   natriumcarbonaat   of natriumacetaat aan de melk toevoegde in zoda- nige hoeveelheid, dat dezelfde pH bereikt werd als die, welke bij   toevoeging   van CMC in de oplossing ontstond, dan trad geen schifting op. 



   Verder werd gevonden, dat men de omzetting van een gedeelte van de COONa-groepen ook nog op andere wijze dan door vermenging met een orga- nisch zuur kan uitvoeren, en toch hetzelfde effect in het melkproduct kan bereiken. Het bleek n.l. dat men hetzelfde gunstige effect ook kan berei- ken, indien men de gedeeltelijke omzetting van de in de CMC aanwezige COONa- groepen in GOOH-groepen uitvoert doordat men de CMC, voordat deze aan de melk toegevoegd wordt, door middel van een behandeling met een anorganisch zuur gedeeltelijk in CMC-zuur omzet. Deze omzetting kan geschieden doordat men de in de handel gebrachte CMC ofwel de CMC, zoals deze tijdens de fabri- cage, nadat de vormingsreactie afgelopen is, ontstaat, met een alcoholische of acetonische zoutzuuroplossing behandelt en op deze wijze de CMC gedeel- telijk in CMC-zuur omzet. 



   Het bleek, dat de beste resultaten bereikt werden, indien tussen 20% en 50% van de aanwezige   COONa-groepen   óp deze wijze in   COOH-groepen   wer- den omgezet. Zo bleek, dat indien men van bovengenoemde AKU CMC Mz   851,   35% van het aantal COONa-gropen in COOH-grospen omgezet had, dit product bij de bereiding van melkproducten zeer goede resultaten te geven. Het bleek in het algemeen, dat bij   CMC-typen   met een lagere substitutiegraad een ge- ringer deel van de GOONa-groepen behoefde te worden omgezet dan bij   GMG-ty-   pen met een hogere substitutiegraad om hetzelfde effect in de melk of het melkproduct te verkrijgen.

   Chocolademelk, welke bereid was volgens deze uit-

 vinding, vertoonde in het geheel geen schifting, en het zo gevreesde uitzak- ken van de chocoladedeeltjes, waardoor het uiterlijk onaangenaam beinvloed wordt, trad ook niet op. 



   Consumptie-ijs vervaardigd uit een ijsmix bereid volgens deze vinding had een buitengewoon aangename regelmatige fijne structuur.

   It is known that with such products it has often been attempted to achieve quality-improving effects by adding various substances. Depending on the circumstances, such effects may consist of stabilizing, leveling or increasing the viscosity, so-called thickening of the product.



   Thus, it is known that by adding sodium carboxymethyl cellulose, hereinafter referred to as CMC, to the milk, such effects can be achieved to some extent. However, this presents the unpleasant phenomenon that in many cases a solution of CMC in milk is not stable. A separation usually occurs after a few hours, causing a split into a clear layer and a milky layer. This unpleasant phenomenon is observed with virtually every type of CMC useful for consumption, and was found to be virtually independent of the salt content of the CMC.



   Extensive tests, which were carried out in order to find out how this unpleasant separation phenomenon could be prevented, therefore showed that CMC in milk almost always gives rise to separation if this solution is left alone for several hours.



   While it was possible to achieve some improvement from the total amount of CMC used, b. v. for ice cream mix 1.25 g CMC per liter of milk, not to be dissolved in the whole portion of milk, but in only about 1/4 of the milk, preferably at elevated temperature and then this concentrated CMC solution with the to mix other milk, no

   Surprisingly, it has now been found that it is possible to prepare a completely stable solution of CMC in milk if the COONa groups present in the CMC are partly arranged in 00011 groups.



   Although it would be expected a priori that any addition of acid would adversely affect the tendency to curdle of the milk, it turned out that a very good stable solution could be obtained by adding some organic acid to the milk in addition to the added to the milk. .



   It was found that very good results can always be obtained by ensuring that per 1 mole of COONa groups bound to the OMC, 0.7 to 1.2 moles of organic acid are present in the solution. Any organic acid suitable for consumption can be used for this purpose.

   A very good and particularly stable solution of chocolate milk can be b. v. prepare by adding 2 g CMC and 1.8 g citric acid per liter; also tartaric acid gave very good results. The same good result can also be achieved by first mixing the organic acid in the correct ratio with the CMC, and then adding the required amount of this mixture to the milk product.



   Particularly good results were obtained e.g. achieved with a blend of 55 parts AKU GMC MZ 851 with 45 parts ground tartaric acid. AKU CMC MZ 851 is a pure CMC with a degree of substitution of 0.8, which is z. G. is medium viscous, which means that a 1% solution in water has a viscosity of between 50-100 centipoise.



   Apparently several unknown factors play a role in the preparation of chocolate milk and ice cream mix.    It has further been found that the conversion of part of the COONa groups can also be carried out in a manner other than by admixture with an organic acid, and still achieve the same effect in the milk product. It turned out that that the same beneficial effect can also be achieved if the partial conversion of the COONa groups present in the CMC into GOOH groups is carried out by the CMC, before it is added to the milk, by means of a treatment with a partially converts inorganic acid to CMC acid. This conversion can be effected by treating the marketed CMC or the CMC, as it is formed during manufacture, after the formation reaction has ended, with an alcoholic or acetonic hydrochloric acid solution and in this way the CMC is partially converted into CMC. acid.
