PROCEDE POUR LA PREPARATION D'UNE BIERE SPECIALE.
La présente invention concerne la préparation d'une bière spécia- le, notamment pour diabétiques et obèses, à teneur relativement forte en al- cool et à faible teneur en extraits.
Les procédés connus jusqu'ici ne permettent pas de préparer une bière de ce genre convenant aux diabétiques et obèses, que les médecins puissent recommander sans crainte comme favorable à la santé. En effet, on n'a pas réussi jusqu'ici à pousser la fermentation des hydrates de carbo- ne assez loin pour que même les extraits résiduels non fermentés soient éga- lement dégradés, tout au moins suffisamment pour qu'on puisse les considérer pratiquement comme totalement dégradés.
Le but de l'invention est de remédier à ce défaut des procédés con- nus jusqu'ici et de créer un procédé pour la préparation d'une bière à teneur relativement forte en alcool, et à teneur aussi faible que possible en extraits c'est-à-dire d'une bière n'exerçant aucune action nuisible sur l'équilibre glycémique de diabétiques et d'obèses.
Le procédé selon l'invention, destiné à la solution du problème en question, consiste en ce qu'on utilise déjà la température la plus favo- rable pour la formation du maltose pendant la trempe, et ce plus longtemps que pour le procédé de trempe normale, c'est-à-dire prolongé d'au moins une demi-heure, le pH de la bière finale étant établi au niveau de 5,1, tandis qu'on ajoute un extrait de diastase avant le début de la fermentation princi- pale et un deuxième extrait de diastase à la fin de la fermentation princi- pale.
Suivant une autre particularité de l'invention, on ajoute à la bière en repos un extrait complémentaire de diastase.

tre au repos en ajoutant simultanément une levure fraîche donnant lieu à une forte fermentation.
Pour la mise en oeuvre du procédé, il est nécessaire d'utiliser les matières de départ suivantes, ayant des propriétés spéciales.
1.- Un malt pauvre en albumine, poussé en longueur et fortement séché, qui cède facilement son extrait grâce à sa forte teneur en enzyme.
2. - Un houblon d'une amertume noble et d'une forte teneur en lupuline.
3.- Une levure en poudre donnant lieu à une forte fermentation.
4.- Une eau pauvre en carbonate ou préparée, à faible teneur en sels minéraux.
L'extrait de diastase indispensable à l'obtention d'un taux élevé de fermentation est obtenue par soutirage de moût non sucré. Pendant la fermentation principale aussi bien que pendant la fermentation complémen- taire, ce moût assure par son action de fermentation une dégradation presque totale des sucres difficiles à faire fermenter, dégradation qu'on ne peut pas obtenir par les procédés de fermentation usuels.
Exemple de mise en oeuvre.
On traite par un procédé de double trempe le malt de Pilsen broyé.
Suivant la constitution du malt, on maintient la température de 64 C, la plus favorable pour la formation du maltose, pendant une période de repos de 30 à 60 minutes. Par traitement de l'eau de brasserie ou acidification du moût, on cherche à atteindre pour ce dernier le pH de 5,1. L'épuration et la cuis- son du moût sont effectuées par les procédés usuels.
Après la séparation de l'eau trouble et le refroidissement du moût, et avant le début de la fermentation après l'addition du premier ex- trait de diastase,on transvase le'moût par pompage et on le prépare avec une levure en poudre produisant une forte fermentation.
A la fin de la fermentation principale, on ajoute un autre extrait de diastase. Dès l'obtention d'une fermentation aussi forte que possible en cuve on transvase. Pendant le temps de repos on soutire la bière, et on la laisse éventuellement en repos après une autre addition d'extrait de dias- tase et de levure fraîche jusqu'à l'obtention d'un taux de fermentation et d'élimination proportionnellement élevé.
