Abstract

Методът намира приложение в хранителната промишленост. Чрез него по оригинален и ефективен начин се отстраняват нежелани съставки от слънчогледовото брашно, подобряват се технологичните му качества и се коригира вкусът му. Методът се осъществява чрез провеждане на млечна ферментация на водна суспензия от обезмаслено брашно при рн от 4 до 5,5 и температура от 30 до 400с.3 претенции
