Abstract

Методът е приложим за получаване на лиофилизирани хранителни продукти от естествени суровини като кисело мляко, плодове и други. Получените продукти имат повишени устойчивост на въздействията на околната среда и хранителна стойност. По метода компонентите се смесват и хомогенизират и в получената смес се вкарва въздух до увеличение на първоначалния обем от 3 до 90%. След охлаждане при непрекъснато разбъркване до температура от -5 до -120с, продуктът се оформя чрез екструдиране, замразява се дълбоко при температура от -15 до -600с и се лиофилизира до постигане на остатъчна влажност от 0 до 10%. 29 претенции
