Abstract
As referidas bactérias são utilizáveis notadamente para a produção de fermentos lácteos."RECOMBINANT MILK BACTERIA, MILK FERMENT, BACTERIAL CULTURE PROCESSES, PREPARATION OF A FERMENTED PRODUCT AND INTRODUCTION OF A GENE ENCODING A PROTEIN OF INTERESTED DETERMINATION AND USE OF A MILKY AND YEAST". The invention relates to the milky bacteria that are given a respiratory metabolism, notably by genetic modifications, as if alternating the expression of at least one gene, whether heterologous or homologous, coding for a protein intervening in said respiratory metabolism. Said bacteria are particularly useful for the production of milk yeast.
