Abstract

"BACTéRIA LáCTEA RECOMBINANTE, FERMENTO LáCTEO, PROCESSOS DE CULTURA BACTERIANA, DE PREPARAçãO DE UM PRODUTO FERMENTADO E DE INTRODUçãO DE UM GENE CODIFICANDO UMA PROTEìNA DE INTERESSE DETERMINADO E UTILIZAçãO DE UM FERMENTO LáCTEO E DE UMA CEPA". A invenção refere-se às bactérias lácteas às quais se confere um metabolismo respiratório, notadamente por modificações genéticas, como que alternado a expressão de pelo menos um gene, seja heterólogo seja homólogo, codificando para uma proteína intervindo no referido metabolismo respiratório. As referidas bactérias são utilizáveis notadamente para a produção de fermentos lácteos."RECOMBINANT MILK BACTERIA, MILK FERMENT, BACTERIAL CULTURE PROCESSES, PREPARATION OF A FERMENTED PRODUCT AND INTRODUCTION OF A GENE ENCODING A PROTEIN OF INTERESTED DETERMINATION AND USE OF A MILKY AND YEAST". The invention relates to the milky bacteria that are given a respiratory metabolism, notably by genetic modifications, as if alternating the expression of at least one gene, whether heterologous or homologous, coding for a protein intervening in said respiratory metabolism. Said bacteria are particularly useful for the production of milk yeast.
