Abstract
"PROCESSO DE PREPARAçãO DO CORANTE NATURAL DO AçAì (EUTERPE OLERACEA -MART-ARECACEAE)". A presente invenção refere-se à preparação do corante natural do açaí (Euterpe oleracea - Mart - Arecaceae), na forma de extrato hidroalcoólico ou pó granulado, com boa estabilidade e coloração violáceo-purpúrea, e sua utilização como aditivo para fitoterápicos, cosméticos e alimentos. O corante pode ser obtido a partir dos frutos inteiros, à temperatura ambiente, através de extração seletiva em etanol aquoso, em meio acidificado. O extrato líquido é filtrado, destilado à vácuo e o valor do pH ajustado para 3,5.
