Abstract

Bebida, gordura em pó, emulsão e método para a produção da mesma, e, uso de um hidrocolóide. A presente invenção refere-se a uma bebida que é uma emulsão de óleo em água e que compreende hidrocolóides, em que os hidrocolóides são uma mistura de gelano e pectina e em que a fase oleosa ou a fase gordurosa compreende esteróis ou estanóis ou ésteres de esteróis de ácido graxo ou ésteres de estanóis de ácido graxo ou uma mistura destas substâncias. Os hidrocolóides evitam ou retardam a sedimentação de um precipitado da fase oleosa ou da fase gordurosa da emulsão de óleo em água.
