Abstract
"APLICAçãO DE LIPASE EM FERMENTAçãO" A presente invenção proporciona a produção de um mosto fermentável que compreende as etapas de: liq³efazer e sacarificar material cereal na presença de uma ou mais enzimas de mosto, opcionalmente submeter o material cereal assim tratado à filtragem para obter um mosto fermentável caracterizado em que durante a liquefação e/ou a sacarificação uma enzima dotada de atividade lipolítica está presente. O material cereal pode compreender um material cereal bruto, tal como cevada bruta.
