Abstract

"COMPOSIçõES, PRODUTO ALIMENTìCIO E MéTODO PARA A OBTENçãO DE UM MATERIAL PROTéICO DE SOJA". Um material protéico de alta resistência de gel que pode ser incorporado em produtos alimentícios. O material protéico de alta resistência de gel pode ser um concentrado protéico que possui uma resistência de gel de banha de pelo menos cerca de 560,0 gramas e um teor protéico de pelo menos cerca de 65,0% em peso em uma base livre de umidade. O concentrado protéico alta resistência de gel é obtido pela remoção dos componentes solúveis a partir de um concentrado protéico de soja lavado com álcool após um ajuste de pH em menos de 6,0, reajuste do pH em mais de 7,0, e a sujeição do concentrado resultante a tratamento térmico e opcionalmente o cisalhamento para formar um produto, e em seguida opcionalmente secar o produto resultante.
