Abstract
"MATERIAIS CONTENDO FIBRA DIETéTICA MELHORADA COMPREENDENDO GLUCAN DE PESO MOLECULAR BAIXO". Um material de fibra dietética obtido usando enzimas para digerir grãos de cereal. As enzimas substancialmente hidrolisam qualquer amido que ocorre no grão de cereal em moléculas pequenas mas apenas parcialmente hidrolisam moléculas de <225>-glucan. O material de fibra dietética pode ter excelentes propriedades fisicoquímicas, fisiológicas e sensórias como peso molecular baixo, uma distribuição de peso molecular particular e uma polidispersabilidade particular, além de ter excelentes propriedades de ingrediente alimentício. Como um ingrediente alimentício, o material pode ter teor de <225>-glucan alto que fornece nutriente ao corpo. Porque o material de fibra dietética pode ter sensação de boca neutra, ele pode ser usado para intensificar o teor nutricional de sorvete, iogurte, mercadorias assadas, barras, bebidas ou certos outros alimentos - sem afetar o gosto ou outros atributos sensórios do alimento.
