Abstract
"MELHORAMENTO DAS PROPRIEDADES DE LIMPIDEZ E/OU ESTABILIDADE DOS LìQUIDOS E GéIS CONTENDO PROTEìNA". A presente invenção descreve um processo para melhorar as propriedades de limpidez e/ou estabilidade de um líquido ou gel contendo proteína, compreendendo a sujeição do líquido ou gel a um tratamento por pressão de 100 MPa ou superior. As proteínas preferidas úteis na invenção são os isolados de proteína do soro e concentrados de proteína do soro. Os processos da invenção podem ser usados para aperfeiçoar as propriedades de limpidez e/ou estabilidade dos sucos de frutas, sucos de vegetais, concentrados de proteína e xaropes de proteína.
