Abstract
"MéTODOS PARA CONTROLAR A MASSA ESPECìFICA A UM NìVEL PREDETERMINADO DE UM PRODUTO ALIMENTìCIO COMESTìVEL AERADO DURANTE A PREPARAçãO DO MESMO E PARA CONTROLAR A MASSA ESPECìFICA DE UM PRODUTO ALIMENTìCIO EM UM NìVEL PREDETERMINADO DURANTE PREPARAçãO CONTìNUA DO MESMO, E, SISTEMA PARA IMPLEMENTAçãO DO MéTODO". Método e sistema para controle da massa específica a um nível predeterminado de um produto alimentício comestível aerado, durante sua preparação. é obtida uma medição de massa específica em um local suficientemente à jusante de uma unidade de cisalhamento utilizada para formar o material aerado de modo que o produto esteja em uma condição de equilíbrio. Conseqüentemente pode ser feito um ajuste na velocidade de introdução do gás de aeração em um local à montante da unidade de cisalhamento que é calculado para reduzir qualquer diferença entre as massas específicas, predeterminada e medida, do produto, de maneira precisa e confiável. Além disso, gás de injeção com solubilidade reduzida pode ser usado de forma que a massa específica do produto possa alcançar logo o equilíbrio. Distúrbios à montante na massa específica do material de partida da formulação também podem ser monitorados e contrabalançados por ajustes feitos na vazão de gás, para auxiliar na manutenção da massa específica de produto desejada.
