Abstract
"APROVEITAMENTO DA áGUA RESIDUáRIA DO DESMUCILAMENTO DO CAFé PARA FINS NUTRICIONAIS". Patente de Privilégio de Invenção para à água residuária do desmucilamento do café, subproduto obtido no processo, usando-se água de boa qualidade para abastecer o desmucilador. Tal subproduto contém água e mucilagem, rica em açúcares, pectinas, celulose + cinzas (45%, 35% e 17%, respectivamente, em base seca). Experimento recém efetivado permitiu constatar que a mucilagem possui altos teores de K, Ca e Mg. Há registro na literatura de que a mucilagem não contém cafeína nem tanino. Na prática, o sabor da mucilagem pode ser constatado ao se morder o fruto de café, mais adocicado no estádio cereja.Tais características sinalizam que a mucilagem pode ser usada para fins nutricionais.
