Abstract
PROCESSO E APARELHO PARA PRODUçãO DE CASCA à BASE DE GORDURA COMESTìVEL PARA CONFEITARIAS E CONFEITOS PRODUZIDOS POR ELAS.A presente invenção refere-se a um método e a um aparelho para formar uma casca à base de gordura comestível em um suporte de acondicionamento, tendo uma forma desejada que define um volume nele. Uma ou mais paredes de espessura consistente são formadas diretamente no suporte de acondicionamento, de uma quantidade de composição formadora de casca comestível. A composição inclui uma ou mais gorduras, e tem uma viscosidade plástica de cerca de 10 a 40 poise e um valor de escoamento de cerca de 50 a 250 dinas/cm¬ 2¬, antes da formação da casca no suporte. As paredes da casca à base de gordura comestível têm, de preferência, a forma de uma taça, cone ou outro receptáculo de parte de topo aberta, e um enchimento é, pelo menos parcialmente, retido dentro delas. As cascas representam outra concretização da invenção. Antes de consumo do produto, o suporte de acondicionamento é removido.
