Abstract
PROCESSO PARA A PRODUçãO DE ALIMENTO. Processo para a produçào de um produto alimentício ou ração compreendendo uma etapa de aquecimento, seguida pela adição de uma enzima a uma forma intermediária do produto alimentício ou ração, pelo que a enzima é capaz de diminuir o nível de acrilamida no produto alimentício ou ração. A invenção também se refere a produtos alimentícios ou ração obtidos pelo processo da invenção.
