Abstract

FORNO DE COMBUSTçO DE MADEIRA DO TIPO DE TéNEL INDUSTRIAL PARA O COZIMENTO DE PIZZA E PRODUTOS ALIMENTARES SIMILARES. A presente invenção refere-se a um forno industrial com túnel para o cozimento de pizza ou produtos alimentares similares, composto de uma estrutura de suporte (10) em material refratário compreendendo uma abertura de entrada (40) e uma de saída (41) conectadas por um túnel de passagem direta (4) ao longo do qual desliza uma superfície de cozimento (5) suportando a pizza ou produtos alimentares similares. O dito forno é aquecido com lenha e ele compreende fendas (22, 24) para a passagem do ar primário para a combustão da lenha e ar para a oxidação da fumaça excessiva, os ditos ares primário e secundário sendo movidos por ventoinhas (50) controladas por uma unidade de controle que processa os dados na composição do ar detectado dentro do forno por sensores (26), uma câmara de combustão superior (15) alojando fornalhas superiores (17) compostas de grelhas superiores (18) suportando a lenha combustível e uma câmara de combustão inferior (16) alojando as fornalhas inferiores (30) compostas de grelhas inferiores (31) suportando a lenha combustível.
