Abstract

COMPOSIÇÃO DE GORDURA OU ÓLEO. Para obter uma composição de gordura ou óleo que pode preparar um alimento em fritura profunda saboroso, que é revestido com massa tendo uma dispersabilidade satisfatória, e sabor e textura aperfeiçoados, é fornecida uma composição de gordura ou óleo contendo 20% em peso ou mais de diacilglicerol e ésteres de ácido graxo de sacarose, em que o teor de monoéster dos ésteres de ácido graxo de sacarose é de 30% em peso ou mais.
