Abstract
Fromage Gouda en grains caractérisé en ce qu'il possède un taux d'humidité variant entre 36 et 44% et un pourcentage de matières grasses variant entre 26 et 35%.
Le fromage est constitué de lait pasteurisé, de ferment lactique bactérien, de sel et de présure. Le fromage Gouda en grains de la présente invention est caractérisé
par une période de conservation de 10 à 12 jours, une texture et une apparence attrayante ainsi que la propriété
de pouvoir être fondu rapidement.
Le fromage est constitué de lait pasteurisé, de ferment lactique bactérien, de sel et de présure. Le fromage Gouda en grains de la présente invention est caractérisé
par une période de conservation de 10 à 12 jours, une texture et une apparence attrayante ainsi que la propriété
de pouvoir être fondu rapidement.
