Abstract

L'invention concerne un procédé d'élimination de la graisse digestible d'un mélange réactionnel brut comprenant de la graisse non digestible et au moins une graisse digestible choisie dans le groupe constitué de graisses digestibles possédant des chaînes d'acides gras. Ledit procédé consiste à: (1) traiter le mélange réactionnel brut à l'aide d'une solution aqueuse comprenant de la lipase selon un pH suffisant pour que des savons soient obtenus des chaînes d'acides gras; et (2) enlever les savons.
