Abstract

L'invention porte sur un procédé de production de biomasse de levure par la culture de levure à une échelle commerciale, ladite culture comprend un ou plusieurs gènes HXK2 ou analogues fonctionnellement supprimés. Par ailleurs, l'invention concerne la biomasse de levure pouvant être obtenue au moyen dudit procédé. La présente invention porte également sur une levure pressée, une levure de crème à base de levure séchée de ladite biomasse. En outre, cette invention concerne un procédé de production de protéines ou de métabolites secondaires, par une culture de levure comprenant un ou plusieurs gènes HXK2 ou leurs analogues fonctionnellement supprimés.
